grated peel of one lime

Beat the egg whites with the cream of tartar until it forms stiff peaks!.
In a separate small but heavy pot, mix the water, sugar, and lime peel!. Cook over a medium high heat until a candy thermometer reads 230F!.
Remove from heat!. In a random dripping motion pour the egg white mixture into the pot!. Mix for about 6 minutes by hand or until the mixture has become firm!.

*Mallow and Red Currant Cups

1-1/2 cups vanilla wafer crumbs
1/4 cup honey or light corn_syrup
2 cups ground walnuts or pecans
2 tablespoons cocoa_powder (can used Dutch processed or regular unsweetened cocoa powder)
Confectioner_sugar for dusting

1!. In a medium bowl, combine walnuts , wafer crumbs and cocoa!.

*Chocolate Mayonnaise Cake with Chocolate Cream Cheese Icing(This cake recipe is from the late 60's!. It may sound weird but the mayonnaise replaces the salt, butter and eggs in a normal cake recipe, and it is a really great cake!.)

-For The Cake:
3 Cups unsifted all_purpous_flour
1 1/2 Cups granulated_sugar
1/3 cup unsweetened cocoa
1 1/4 tsp baking_powder
1 1/2 tsp baking_soda
1 1/2 cups mayonnaise
1 1/2cups water
1 1/2 tsp vanilla_extract
-For The Icing:
1 box sifted powdered_sugar
4 Tbsps cocoa powder
1 8oz block cream_cheese at room temp
3/4 cube softened butter

2 Tbsps cream
Pinch salt

Step: 1 Grease 2 9 inch cake pans and line the bottoms with wax paper!.
Sift together dry ingredients in a medium sized mixing bowl!. Stir the mayonnaise into the dry ingredients!. Gradually stir in the water and vanilla and mix until batter is smoothly blended!. Pour batter into prepared pans!. Bake at 350 for about 30 minutes or until cake springs back when touched!. Cool in pans for 15 minutes and then unmold cakes onto a wire rack and gently remove waxed paper!. Cool completely before icing with the chocolate cream cheese icing!.
Step: 2 For the icing!. In a medium sized mixing bowl, cream the cream cheese and the butter with a mixer until light and fluffy!. Combine sifted powder sugar, cocoa and salt!. Add slowly to the creamed mixture along with 1 Tbsp of the cream!. Continue mixing until the mixture is smooth!. Add the remaining Tbsp of cream if the icing is too thick!.

Gooey Butter Cake

Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted

Preheat oven to 350 degrees F!.

Combine the cake mix, egg, and butter and mix well with an electric mixer!. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan!. Prepare Filling

Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar


In a large bowl, beat the cream cheese until smooth!. Add the eggs, vanilla, and butter and beat together!. Next, add the powdered sugar and mix well!. Spread over cake batter and bake for 40 to 50 minutes!. Make sure not to over bake as the center should be a little gooey!.

Yield: 6 to 8 servings
Preparation time: 30 minutes

Apple Cake

4 cups diced apples
2 cups sugar
1 cup raisins
1 tsp salt
1 cup oil
2 eggs, beaten
1 cup walnuts
2 cups flour
2 ? cups apple juice
2 t baking soda
2 t cinnamon

? Mix apples, sugar, raisins, salt!. Let stand 1 hour
? Add oil, eggs and walnuts!.
? Sift in flour, juice, baking soda, cinnamon and salt!.
? Pour into greased cake pan, 350 degrees for 1 hr and 15 minutes!.
