Beef and Spaghetti??!

2 tbsp olive oil or sun-dried tomato oil from the jar
6 rashers of smoked streaky bacon, chopped
2 large onions, chopped
3 garlic cloves, crushed
1kg/2?lb lean minced beef
2 large glasses of red wine
2x400g cans chopped tomatoes
1x290g jar antipasti marinated mushrooms, drained
2 fresh or dried bay leaves
1 tsp dried oregano or a small handful of fresh leaves, chopped
1 tsp dried thyme or a small handful of fresh leaves, chopped
drizzle balsamic vinegar
12-14 sun-dried tomato halves, in oil
salt and freshly ground black pepper
a good handful of fresh basil leaves, torn into small pieces
800g-1kg/1?-2?lb dried spaghetti
lots of freshly grated parmesan cheese, to serve
Method
1!. Heat the oil in a large, heavy-based saucepan and fry the bacon until golden over a medium heat!. Add the onions and garlic, frying until softened!. Increase the heat and add the minced beef!. Fry it until it has browned, breaking down any chunks of meat with a wooden spoon!. Pour in the wine and boil until it has reduced in volume by about a third!. Reduce the temperature and stir in the tomatoes, drained mushrooms, bay leaves, oregano, thyme and balsamic vinegar!.
2!. Either blitz the sun-dried tomatoes in a small blender with a little of the oil to loosen, or just finely chop before adding to the pan!. Season well with salt and pepper!. Cover with a lid and simmer the Bolognese sauce over a gentle heat for 1-1? hours until it's rich and thickened, stirring occasionally!. At the end of the cooking time, stir in the basil and add any extra seasoning if necessary!.
3!. Remove from the heat to 'settle' while you cook the spaghetti in plenty of boiling salted water (for the time stated on the packet)!. Drain and divide between warmed plates!. Scatter a little parmesan over the spaghetti before adding a good ladleful of the Bolognese sauce, finishing with a scattering of more cheese and a twist of black pepper!.Www@FoodAQ@Com

1 small green bell pepper, chopped
1/2 yellow onion
1 tablespoon garlic salt
3 1/2 cups Neely's BBQ sauce, recipe follows
1 pound pork, beef, or chicken, cooked and chopped into bite-size pieces
1 pound spaghetti
In a large skillet, heat olive oil over medium heat!. Saute the pepper and onion, until softened for 1 to 2 minutes!. Stir in the garlic salt!. Add the premade BBQ sauce and bring to a boil!. Reduce the heat to a low simmer and add the chopped meat!.
Meanwhile, fill a large pot with water and bring to boil!. Season liberally with salt and add spaghetti!. Cook for 7 minutes, until al dente (firm but not hard) and drain!. Toss spaghetti with sauce!.
Neely's BBQ Sauce
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
In a large saucepan, combine all ingredients!. Bring mixture to a boil, reduce heat to simmer!. Cooked uncovered, stirring frequently, for 1 hour 15 minutes!.
Yield: 3 1/2 cups

I've personally found I enjoy making my own sauce, rather than using a jar!. I don't usually measure; I find that tasting along the way makes a much better sauce!. You'll be able to adjust it to what YOUR tastes like!.
Brown 1/2 lb ish of hamburger NOT in oil--why would you add more fat!? Brown it with chopped onions and garlic, salt, and pepper!. Add chopped/dried parsley while it's browning!.
When the meat is browned, add a can of the smallest tomato paste, as many chopped (can used canned diced tomatoes) tomatoes as you want, and enough water to make the sauce the consistency you want!.
As for spices in the sauce, I go with oregano, bay leaf, and basil!. If I want a spicey spaghetti, sometimes I'll add a TINY bit of chili powder or crushed red pepper!. Be sure to add something sweet--like a little sugar, or honey!. Adding sugar really balances out the bitterness of the tomato and seasonings!. Season to taste!.
Let that simmer for at least 10 minutes--the longer the better!.
Obviously, you serve this over spaghetti noodles with parmesan cheese :)Www@FoodAQ@Com
