PIZZA CASSEROLE

1 pkg!. pepperoni
1 lb!. ground beef, browned and drained
1 pkg!. cooked egg noodles
1 small can mushrooms, drained (optional)
1 can cheddar cheese soup
1 jar pizza sauce
2 cups mozzarella cheese
Salt and pepper to taste

Add all of the ingredients together except for the mozzarella cheese!. Sprinkle it on the top of the casserole!. Bake at 350 degrees for 25-30 minutes!. You can make this in two casserole dishes!. They can have one whenever you make it and another to put in the freezer!.

I serve this with three bean salad, fresh bread, and dessert!.

Homemade Sloppy Joes


2 pounds Lean Ground Beef
1 medium Onion -- chopped
3/4 cup Brown Sugar
1 tablespoon Prepared Mustard
1/2 cup Barbecue Sauce
2 tablespoons Catsup

Brown ground beef & onion in a large skillet and drain!. Add other ingredients and simmer for 5 minutes!. Serve on buns or over broken bread!.

This recipe freezes very well!.

Serves 12

Magnificent Casserole


2 pounds Lean Ground Beef
8 ounces Cream Cheese
1 tablespoon Green Pepper -- minced
1/2 cup Sour Cream
1/2 cup Swiss Cheese -- grated
8 ounces Egg Noodles -- (package)
1 pound Cottage Cheese
1/3 cup Green Onion -- chopped
2 cups Tomato Sauce

In a large pan, cook noodles in boiling, salted water until tender!. Drain & set aside!. In a large bowl, mix together cream cheese, cottage cheese and sour cream!. Add onion and peppers!. Set aside!. Brown ground beef & drain any fat!. Add tomato sauce to ground beef!. Grease 9 x 13 inch cake pan or casserole dish, and arrange the following layers: Noodles, cheese mixture, meat mixture - then repeat!. Top with grated Swiss cheese!. Bake at 375 degrees F for 30 minutes!.

Note: If you will be freezing this casserole for later use, you may want to reduce or omit the amount of green pepper and onion which are used, as they have a tendency to get stronger over a long period of time!.

Serves 8

King Ranch Chicken Casserole

1 cup Onions -- diced
1 cup Green Bell Peppers -- diced
1/2 pound Mushrooms
1/4 cup Butter or Margarine
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 pound Cheddar Cheese -- shredded
2 cups Chicken -- cooked and diced
1 can Tomatoes with Green Chilis
1 clove Garlic -- minced
2 tablespoon Chili Powder
1 tablespoon Chicken Broth
12 Corn Tortillas -- torn into quarters

In a large pan, sauté onion, bell pepper, and mushrooms in butter, Add soups, tomatoes & chilies, garlic, chili powder, and chicken broth!. Line bottom of a 9x13 inch pan with pieces of tortillas!. Spread half the chicken over the tortillas and top with half of the sauce, then half of the cheese!. Cover with another layer of torn corn tortillas, and repeat the chicken, sauce and cheese layers!. Bake at 350 degrees F for 30 minutes or until bubbly!.

Serves 6

(When freezing, put in freezer after assembling casserole, and bake when ready to eat!.)

BASIC FROZEN VEGETABLE SOUP MIX

7 1/2 lbs!. tomatoes (about 20)
1 head cabbage, chopped
1 bunch celery
2 green peppers
3 onions
15 lg!. carrots
1/3 c!. salt
Any other vegetables you may have on hand (corn, green beans, limas, beans, parsley)

Dice all ingredients and heat slowly!. Cook 10 minutes and allow to cool!. Put in quart or larger container and freeze!.

VEGETABLE BEEF SOUP:

Cook soup bones, or use a bony roast and any left over beef juice from roasts!. Remove meat from bones and add 1 whole bay leaf to juice and at least 1 1/2 quarts water, 1 container of frozen soup mix, 1/2 cup pearled barley and cook 1 hour!. Stir frequently (or put in a slow cooker!.) Add 3/4 cup frozen green peas and cook 10 minutes more!. You may want to add more water while cooking, also some pepper and some leftover diced potatoes!.

Stuffed Bell Peppers for Freezer
6 large bell peppers
1 cup onion, chopped
1 teaspoon salt
2 cups tomato soup, undiluted
1 pound ground beef
2 teaspoons chili powder
1/2 teaspoon pepper
1/2 pound cheese, grated
1 1/2 cups cooked rice

Cut peppers in half and boil in salted water for 3 minutes!. Remove and set aside!. Brown beef and onions!. Drain off excess fat!. Add chili powder, salt, pepper and soup to beef mixture and simmer for 10 minutes!. Remove from heat and add cheese and rice!. Mix well!. Fill peppers with beef-rice mixture!. Bake at 350 degrees F for 30 minutes for immediate use or they can be frozen for up to 3 months!.

FREEZER LASAGNA

2 pkgs!. lasagna noodles (DO NOT COOK)
2 (15 oz!.) containers ricotta cheese
3 pkgs!. Mozzarella cheese, grated
3 pkgs!. sharp cheese, grated
2 c!. Parmesan cheese, grated
Sugar, to taste
Ground beef
Prego or Ragu spaghetti sauce

Cook ground beef until well browned, add spaghetti sauce and sugar!. Heat!.
In 13 x 9 x 2 inch tin foil baking pan, spoon a little sauce in bottom of pan evenly!. Layer noodles, ricotta, Mozzarella, spaghetti sauce and Parmesan!. Repeat until all ingredients are used, ending with sauce and Parmesan!.

Cover with tin foil and freeze!. Thaw!. Bake at 350 degrees for 1 hour!. Makes 2 lasagnas!. Can make meatballs and put around on top before freezing


FREEZER STROGANOFF

2 lbs!. beef sirloin steak, 1/2 inch thick
1/2 lb!. fresh mushrooms, sliced
2 med!. onions, sliced
1 clove garlic, finely chopped
1/4 c!. butter
1 c!. water
2 tsp!. instant beef bouillon
1 tsp!. salt
1 tsp!. Worcestershire sauce
1/2 c!. water
1/4 c!. all purpose flour

Cut beef steak across grain into strips 1/2 inch wide and 1 1/2 inches long!. Cook and stir mushrooms, onions and garlic in butter in 10 inch skillet until onions are tender; remove vegetables!. Brown beef in same skillet!. Stir in 1 cup water, the instant bouillon, salt and Worcestershire sauce!. Heat to boiling; reduce heat!. Cover and simmer 15 minutes!. Stir 1/2 cup water into the flour; stir into beef mixture!. Add vegetables!. Heat to boiling, stirring constantly!. Boil and stir 1 minute!. Pour into two 1 quart freezer containers!. Cool quickly!. Cover and label; freeze up to 4 months!.
45 minutes before serving dip containers into hot water to loosen!. Place frozen stroganoff and 1/2 cup water in 10 inch skillet!. Cover and heat over medium heat, turning occasionally, until meat is hot, about 30 minutes!. Stir 1 1/2 cups dairy sour cream into hot stroganoff and heat (DO NOT BOIL)!. Garnish with parsley!. 8 servings


FREEZER MEATBALLS

2 beaten eggs
2 c!. soft bread crumbs,
2 2/3 slices
1 med!. onion, chopped
1/3 c!. milk
1/2 tsp!. salt
1/2 tsp!. dried thyme, crushed
1 lb!. ground beef 1 lb!. ground pork

In a large bowl combine eggs, bread crumbs, onion, milk, salt, and thyme!. Add beef and pork!. Mix well!. Shape meat mixture into 48 meatballs!.
In a 9 inch pie plate arrange 16 meatballs!. Cook meatballs, uncovered, on 100% power (high) 4-6 minutes or until no longer pink, turning meatballs over and rearranging once!. Transfer meatballs to paper towels!. Repeat until all meatballs are cooked!.

Place meatballs in a baking pan, then place in freezer until just frozen!. Using 16 meatballs per package, wrap in moisture and vapor proof wrap!. Seal, label, and freeze up to 6 months!. Makes 48!.


FLAKY FREEZER BISCUITS
Yield: 41 Servings

1 Pkg!. yeast(1tablespoon)
2 tb Sugar
1/4 c Warm water
5 c Flour
3 tb Sugar
1 tb Baking powder
1 ts Baking soda
1 ts Salt
1 c Butter or margarine
2 c Buttermilk

In a small bowl combine yeast and sugar in water!. Set aside for 10
min!. In a large bowl mix flour, sugar, baking powder, soda and salt!.
Cut in butter to form a crumbly mixture!. Stir in yeast mixture and
buttermilk!. Mix just enough to hold dough together!. Roll dough 3/4
in!. thick on floured surface!. Cut out biscuits with the top of a
glass or a cutter!. Prick tops with fork!. Freeze separately on cookie
sheet!. After biscuits are frozen, stack and wrap well!. Before baking
let rise until doubled in size!. Bake at 425F for 15 mins!. on a
lightly greased cookie sheet Makes 3-4 dozen!. Grated Cheddar cheese
may be added to soft dough for flaky cheese biscuits!.Www@FoodAQ@Com

I also prepare meals on sunday, and freeze them!. Some of my favs that freeze well include!.!.!.

Cabbage rolls:
You can mix up filling like meatloaf, and make them into big meatballs!. Blanch cabbage leaves and wrap mixture!. They freeze great, and you can either cook them ahead of time or cook before eating!. Serve with rice and plain tomato sauce!.

Porkipines: (sorry about spelling)
These are meatballs with rice in them!. I use about 1 lb of hamburger meat and 1 lb of ground pork!. Put them in a mixing bowl and add garlic powder, salt & pepper, and dried onions to taste!. Add about 1 and 1/2 cup of uncooked rice!. Mix well with hands!. Make into balls, and freeze!. If you want to go ahead and cook them and then freeze, they work out great, too!. Just cook in a pan on the stove until meat is done!. When you are ready to eat, add 1 family size can of cream of mushroom soup for sauce!. Serve over cooked rice!.

Chicken and rice:
Cook chicken and cut into chunks!. Add cooked rice and cream of chicken soup!. I like to also add broccoli florets!. Freeze, and reheat for dinner!.

Sloppy joe mix:
Cook hamburger meat and add sloppy joe mix!. Sometimes it is better after it has been frozen!.

When I make stuff for freezing, I'll spend a Sunday doing a few recipes!. I make pasta sauces, all kinds of stews, lasagna, casseroles, soups, meatballs, shepherd's pie, meat pies, pizzas!. Those are just a few things!. Just wrap those things well and someone else mentioned especially shepherds/ pie as mashed potatoes don't 'technically' freeze well but if you saran it well so no air gets to it, then it will reheat fine!.Www@FoodAQ@Com

BHarvey is right, lasagna is always a good choice!. You can also freeze meatloaf just wrap it tightly to prevent any freezer-burn!. I always cook a big meatloaf then freeze about 2/3 of it so I don't have to eat meatloaf for the next two weeks!.!.!.!.!.!.!.!.!.!.Www@FoodAQ@Com

Even simpler is just make extra large meals and freeze the leftovers!. Or cook a large pot of bolognese sauce and make one lasagna and one spaghetti bolognese, the same works with mince ie!. cottage pie!.Www@FoodAQ@Com

I make meatloaf in muffin pans and freeze them in bags of four!. Just pop them in the microwave after thawing and you have a healthy quick meal!.
