Tzatziki (Yogurt And Cucumber Sauce):
3 cups plain yogurt
1 lemon, juiced
2 medium cucumbers, peeled, halved, seeded and diced
1 tablespoon finely chopped fresh mint leaves
Kosher salt and freshly ground black pepper
Put all the ingredients in a mixing bowl and combine with a fork!. Refrigerate for at least 1 hour to allow the flavors to marry!.Www@FoodAQ@Com

Its called tsatsiki!. You will need to salt the cucumber to draw out the excess water, otherwise you will end up with a very liquidy and runny sauce!. So- dice the cucumber finely, salt well and let it sit in a sieve overnight in the fridge!. Squeeze the cucumber out and place in a bowl, with a few cloves of minced garlic, cracked pepper, juice of half a lemon, fresh oregano or marjoram (optional), and some people use dill!. I use half sour cream and half greek yoghurt otherwise its too sour!. taste for seasoning and voila!Www@FoodAQ@Com

10 Cucumbers(peeled)
1 Small Yellow Onion
5 lb Sour Cream
2 ts Salt
1 ts Black Pepper
2 tb Parsley Flake
3 tb Dill Weed
Peel and finely dice the cucumbers!. Dice the onion the same size!. Mix with
the rest of the ingredients!. Taste and let set overnight!. Taste again and
make any neccessary adjustments!.
