Question: Fresh spinach: What to do with it!?
I bought a big ol' bag of fresh spinach the other day to add to my salads!.

I love spinach - the boyfriend does not!. So I'm finding that my big bag of spinach isn't diminishing very quickly (I eat a big salad every day and throw some spinach in there along with the lettuce!.)

I HATE to waste anything, but its going to go bad if I don't start using it a little quicker than I am now!.!.!.

One word: Spanakopita

2 lbs!. fresh spinach (or 3 pkgs!. frozen spinach, drained well)
3 lg!. eggs
1 tsp!. salt
Pepper to taste
1/2 tbsp!. nutmeg
1/2 lb!. Feta cheese
6 oz!. cottage cheese or Ricotta
1/2 lb!. butter, melted
1 pkg!. phyllo dough (Publix, freezer)
5 scallions, chopped (green part and all)

Wash spinach; discard stems!. Dry thoroughly as possible on absorbent paper; cut in pieces!. Saute onion in butter until soft!. Cool!. Add spinach, scallions, eggs, cheeses, salt, pepper, and nutmeg!. Mix well!. Place 6 or 7 layers of phyllo pastry sheets in an 11 x 14 x 2 inch pan!. Brush each sheet well with melted butter!. Add spinach mixture, then place 7 or 8 layers of phyllo pastry sheets on filling, again buttering each sheet with melted butter!. Cut (squares like) through the top layer!. Bake in 350 degree oven for 1 hour until brown and crisp!. Cut after 5 minutes!. Can freeze uncooked Spanakopita!. Can also be used as an appetizer!.Www@FoodAQ@Com

Well, here in Portugal the most common thing to do with spinach is soup!.
I like it with those noodles that seem like pumpkin seeds, in fact that's the name that they're given here!.
Add carrot, turnip, potatoe, all in tinny cubes!.
And of course that you'll make a puree(sp!?) for the soup with potatoe and the spinach (leaving a couple of shredded leafs to add with the rest of the veggies)!.
And ,don't forget the good olive oil!.
Ah ! You can also throw an oinion into the puree!.

Hmm!.!.!. I like spinach lasagna!

INGREDIENTS

* 20 lasagna noodles
* 2 tablespoons olive oil
* 1 cup chopped fresh mushrooms
* 1 cup chopped onion
* 1 tablespoon minced garlic
* 2 cups fresh spinach
* 3 cups ricotta cheese
* 2/3 cup grated Romano cheese
* 1 teaspoon salt
* 1 teaspoon dried oregano
* 1 teaspoon dried basil leaves
* 1/2 teaspoon ground black pepper
* 1 egg
* 3 cups shredded mozzarella cheese
* 3 cups tomato pasta sauce
* 1 cup grated Parmesan cheese


DIRECTIONS

1!. Preheat oven to 350 degrees F (175 degrees C)!.
2!. Bring a large pot of lightly salted water to a boil!. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain!.
3!. In a skillet over medium-high heat, cook mushrooms, onions, and garlic in olive oil until onions are tender!. Drain excess liquid and cool!. Boil spinach for 5 minutes!. Drain, then squeeze out excess liquid!. Chop spinach!.
4!. Combine ricotta cheese, Romano cheese, spinach, salt, oregano, basil, pepper, and egg in a bowl!. Add cooled mushroom mixture!. Beat with an electric mixer on low speed for 1 minute!. Lay 5 lasagna noodles in bottom of a 9x13 inch baking dish!. Spread one third of the cheese/spinach mixture over noodles!. Sprinkle 1 cup mozzarella cheese and 1/3 cup Parmesan cheese on top!. Spread 1 cup spaghetti sauce over cheese!. Repeat layering 2 times!.
5!. Cover dish with aluminum foil and bake in a preheated oven for 1 hour!. Cool 15 minutes before serving!.

If you like pasta and use alfredo - saute ur spinach and add it to the pasta!. it tastes awsome!.
also i saute my spinach add garlic and olive oil and put in my sandwich!.
you can basically saute ur spinach and add it to anything from pasta to rice to pizza!. just make sure which way you like it - just salted or with a little garlic

Blanch the spinach and rinse under very cold water, then squeeze it dry!. The dressing I make is totally addictive! Use a few tablespoons of tahini sesame paste, soya sauce, sugar or corn syrup (it should be pretty sweet) and if you have it cooking sake, but its pretty optional!. Pour this over the spinach and mix them together lightly just to coat each leaf/stem!. Its a century old recipe from Japan, and I cant help but make it everytime i get spinach its that good!Www@FoodAQ@Com

Spinach Florentine:

INGREDIENTS
2 tablespoons olive oil
2 cloves garlic, finely chopped
4 skinless, boneless chicken breast halves - cut into strips
2 cups fresh spinach leaves
1 (4!.5 ounce) package dry Alfredo sauce mix
2 tablespoons pesto
1 (8 ounce) package dry penne pasta
1 tablespoon grated Romano cheese


DIRECTIONS
Heat oil in a large skillet over medium high heat!. Add garlic, saute for 1 minute; then add chicken and cook for 7 to 8 minutes on each side!. When chicken is close to being cooked through (no longer pink inside), add spinach and saute all together for 3 to 4 minutes!.
Meanwhile, prepare Alfredo sauce according to package directions!. When finished, stir in 2 tablespoons pesto; set aside!.
In a large pot of salted boiling water, cook pasta for 8 to 10 minutes or until al dente!. Rinse under cold water and drain!.
Add chicken/spinach mixture to pasta, then stir in pesto/Alfredo sauce!. Mix well, top with cheese and serve!.

Spinach and Pork Stuffed Shells:

INGREDIENTS
6 uncooked jumbo pasta shells
1/4 pound ground pork
4 cups water
3 cups torn fresh spinach
1 egg, lightly beaten
3 tablespoons shredded Parmesan cheese, divided
2 tablespoons heavy whipping cream
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1 cup meatless spaghetti sauce


DIRECTIONS
Cook pasta shells according to package directions!. Meanwhile, in a small skillet, cook pork over medium heat until no longer pink; drain and set aside!. In a saucepan, bring water to a boil!. Add spinach; boil for 1-2 minutes or until wilted!. Drain and squeeze dry; chop the spinach!.
In a bowl, combine the pork, spinach, egg, 1 tablespoon Parmesan cheese, cream, garlic, salt, nutmeg and pepper!.
Drain shells; stuff with the pork mixture!. Spread 1/4 cup spaghetti sauce in an ungreased 1-qt!. baking dish!. Place stuffed shells in dish; drizzle with remaining spaghetti sauce!. Sprinkle with remaining Parmesan cheese!. Cover and bake at 400 degrees F for 15 minutes!. Uncover; bake 10-15 minutes longer or until heated through!.

Lemon-Butter Spinach:

INGREDIENTS
2 (10 ounce) bags pre-washed fresh spinach
2 tablespoons garlic, minced
5 tablespoons butter
2 tablespoons lemon juice


DIRECTIONS
Rinse the spinach and place the leaves into a microwavable serving dish!. Add the butter, garlic and lemon juice!. Cover with plastic wrap!. Steam in the microwave until the butter is melted and spinach is wilted, about 2 minutes!. Remove the plastic wrap and toss to distribute seasoning before serving!.

Spinach - Mushroom Pizza:

INGREDIENTS
1 (12 inch) pre-baked pizza crust
3 tablespoons olive oil
1 teaspoon sesame oil
1 cup fresh spinach, rinsed and dried
8 ounces shredded mozzarella cheese
1 cup sliced fresh mushrooms

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Place pizza crust on baking sheet!.
In a small bowl, mix together olive oil and sesame oil!. Brush onto pre-baked pizza crust, covering entire surface!. Stack the spinach leaves, then cut lengthwise into 1/2 inch strips; scatter evenly over crust!. Cover pizza with shredded mozzarella, and top with sliced mushrooms!.
Bake in preheated oven for 8 to 10 minutes, or until cheese is melted and edges are crisp!.

Spinach Soup:

INGREDIENTS
1/4 cup butter
1/4 cup flour
1 (8 ounce) package sliced mushrooms
1/2 cup dry sherry
1 (14!.5 ounce) can chicken broth
1 quart milk
2 bunches fresh spinach, cleaned and chopped
4 green onions, chopped
1/2 teaspoon ground nutmeg
salt and pepper to taste
8 ounces cooked small shrimp

DIRECTIONS
Melt butter in a large saucepan over medium heat!. Whisk in flour, and cook until the mixture turns a darker yellow color, about 5 minutes!. Stir in the mushrooms, and cook for 2 minutes!.
Whisk in the sherry, chicken broth, and milk, then add the spinach, green onion, nutmeg, salt, and pepper!. Bring to a boil over high heat, whisking constantly, then reduce heat to medium low, and simmer until the spinach is tender, 15 to 20 minutes!. Garnish with shrimp to serve!.
