Fish Pie!.
2 Fish Fillets!. (Red Cod)
1 Fish Fillet!. (Smoked)
1 Large Leek!. (Roughly Chopped)
2 Cups Peas!.
1 Medium Onion!. (Roughly Chopped)

Cut fish into bight sized pieces and poach in milk for a few minutes until nearly cooked!. Drain and reserve milk!.
Lightly fry the onions and leeks for a few minutes to soften a little!.
Stir in the milk and simmer until onion and leeks are nearly cooked!.
Thicken a little to make a sauce!.
Arrange fish in a casserole dish, top with peas, chopped egg and spoon in the leeks and onions and a little of the sauce!.
Top with mashed potatoes, sprinkle with grated cheese (tasty/sharp)
Bake in a 180C (350F) oven until it is bubbling and the cheese has begun to colour!.

Bangers with Smashed Mash with Leek and Cider Gravy
2-3 large leeks
2 eating apples, peeled, cored
4 garlic cloves, peeled but left whole
few sprigs each of thyme, sage and rosemary
olive oil
12 good quality thick pork sausages
flaked sea salt and freshly ground black pepper
500ml/17fl oz cider
400ml/14fl oz tinned beef consommé or fresh beef stock
For the mashed potatoes:
8 medium to large floury potatoes, such as Maris Piper, King Edward or Desiree
olive oil
flaked sea salt and freshly ground black pepper
salted butter
small handful of roughly chopped fresh herbs of your choice (e!.g!. parsley, basil, thyme or sage) or 1-2 tsp mustard
1!. Preheat the oven to 200C/400F/Gas 6!.
2!. Stab the potatoes several times with a fork and sit on a very large piece of aluminium foil!. Pour over some olive oil and add plenty of salt!. Wrap the foil loosely around the potatoes and fold over the edges to seal!. Place in the oven and bake for 1? hours!. Rather than baking, they will steam in the foil, giving a fluffy centre and soft skin!.
3!. While the potatoes are cooking, slice the leeks fairly thinly and wash well, getting rid of any grit!. Scatter into a roasting tray with the apples, garlic and herbs!. Pour over some olive oil and place the sausages on top!. Season the whole lot with salt and pepper, then place in the oven for about 45 minutes, turning the sausages occasionally and moving the leeks around to prevent them from sticking!. If they seem to be catching in the base of the pan, add a drop of the cider!.
4!. To check the potatoes are cooked, carefully open the foil and insert a sharp knife into a potato!. If it comes out easily, they're done!. If they still seem a little hard, put them back and check again after a further 10 minutes!. Once they are cooked, remove them from the oven and keep warm in the foil for about 5 minutes, then tip into a large bowl!. (For some, the best part of a potato is the skin, with its lovely nutty flavour!. If you'd rather, you can easily peel it away before smashing the potatoes!.) Roughly smash with a potato masher, adding plenty of butter (olive oil can be used as an alternative), herbs or mustard, if using, and seasoning, resulting in a very rustic-looking fluffy mash!.
5!. Take the roasting tray from the oven and place the sausages on serving plates with the potatoes and keep warm!.
6!. Remove the herb sprigs from the roasting tray and place the tray over a high heat!. Add the cider and bring to the boil!. When the cider has reduced by half, add the beef consommi or stock!. Bring to the boil and cook for a few minutes until the quantity of gravy has reduced by about a third, giving you a rich, full-flavoured, loose gravy!. Taste and add seasoning if it's needed!. Spoon the gravy and leeks over the bangers and mash and tuck in!.
Alternatively, use 3 large sliced onions instead of the leeks, cooking them in exactly the same way!.Www@FoodAQ@Com

Wrap the foil loosely around the potatoes and fold over the edges to seal!. Place in the oven and bake for 1? hours!. Rather than baking, they will steam in the foil, giving a fluffy centre and soft skin!.

1/4 cup cider vinegar
2 tablespoons honey
2 tablespoons canola oil
10 large mushrooms, cut in half
2 green onions, minced
3 skinless, boneless chicken breast halves - cut into chunks
1/2 pound sliced thick cut bacon, cut in half
1 (8 ounce) can pineapple chunks, drained

DIRECTIONS
In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions!. Place the mushrooms and chicken into the mixture, and stir to coat!. Cover, and marinate in the refrigerator at least 1 hour!.
Preheat grill for high heat!.

Broiled Herb Butter Chicken

INGREDIENTS:
4 skinless, boneless chicken
breast halves
1/2 cup butter, softened
3 cloves garlic, minced 1 teaspoon dried parsley
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
DIRECTIONS:
1!. Preheat oven to Broil/Grill and line broiler pan with aluminum foil!.
2!. Place chicken on pan!. In a small bowl combine the butter, garlic, parsley, rosemary and thyme and mix together, then evenly spread a dollop of mixture on each chicken breast!.

My Dad used to make these for us at home for a special treat!. Serve with butter and maple syrup, or lingonberries if you've got them!."
INGREDIENTS:
4 eggs
2 cups milk
1/2 cup all-purpose flour 1 tablespoon sugar
1 pinch salt

DIRECTIONS:
1!. In a large bowl, beat eggs with a wire whisk!. Mix in milk, flour, sugar, salt, and melted butter!.

6 tablespoons unsalted butter, melted
1 1/2 cups crushed graham cracker crumbs
2 tablespoons sugar
Pinch fine salt
Brownie:
8 tablespoons (1 stick) unsalted butter
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
4 large cold eggs
1 cup all-purpose flour
Topping:
4 cups large marshmallows
Position a rack in the lower third of the oven and heat oven to 325 degrees F!. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch!.
For the crust: Lightly butter the foil with some of the melted butter!. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl!. Press the crumb mixture evenly over the bottom of the pan!. Bake until golden brown, about 20 minutes!.
Meanwhile, make the brownie!. Put the butter and chocolate in a medium microwave safe bowl!. Melt in the microwave on 75 percent power for 2 minutes!. Stir, and microwave again until completely melted, about 2 minutes more!. Alternatively, put the butter and chocolate in a heatproof bowl!. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water!. Stir occasionally until melted!. Stir the light brown and white sugars, vanilla and salt into the melted chocolate!. Add the eggs and beat vigorously to make a thick and glossy batter!. Add the flour and stir until just incorporated!.

Cool on a rack, gently removing the brownies from the pan using the aluminum flaps!. Carefully separate any marshmallow from the foil and fold away!. Cut into 12 (2-inch) squares!.

1/2 cup milk

1 cup finely chopped apple
Heat oven to 375°F!. Combine, flour, sugar, baking powder and cinnamon in medium bowl!. Add all remaining ingredients!. Stir just until flour is moistened!.
