This is a DOUBLE Crust Potato Pie:

INGREDIENTS
4 cups sliced peeled potatoes
1 cup chicken broth
1 medium onion, diced
1 tablespoon butter or margarine
3/4 teaspoon salt
1/4 teaspoon pepper
1 Pastry for double-crust pie (9 inches)
1 teaspoon milk

DIRECTIONS
In a large saucepan, combine the potatoes, broth, onion, butter, salt and pepper!. Cook, uncovered, over low heat until potatoes are crisp-tender and broth is absorbed, about 20 minutes; drain!.
Line a 9-in!. pie plate with the bottom pastry!. Spoon potato mixture into the crust!. Roll out remaining pastry to fit top of pie!. Trim, seal and flute edges; cut vents in top!. Brush with milk!. Bake at 425 degrees F for 30-35 minutes or until golden brown!. Serve warm!.Www@FoodAQ@Com

Mississippi Sweet Potato Pie

4 ounces butter, softened
2 cups cooked and mashed sweet potatoes
2 cups granulated sugar
1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 prepared pie shells, unbaked
PREPARATION:
Mix butter, potatoes, sugar and evaporated milk until well blended!. Add vanilla, eggs, and cinnamon; mix well!. Pour into the prepared pie shells!. Bake in a 350° oven for about 1 hour, until set!.

Sweet Potato Praline Cloud Pie

Filling:
2 sweet potatoes, baked or boiled
1/4 cup butter, softened
1 cup sugar
2 eggs
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground mace
1 cup evaporated milk
1 unbaked pie shell

Meringue:
1/4 teaspoon salt
1/4 teaspoon vanilla
1 teaspoon lemon juice
3 egg whites
6 tablespoons sugar

Praline Topping:
2 tablespoons firmly packed dark brown sugar
2 tablespoons dark corn syrup
1 tablespoon butter
1/4 teaspoon vanilla extract
1/3 cup chopped pecans

Preheat the oven to 350 degrees F!.

Mash sweet potatoes and combine with all of the other ingredients!. Pour into pie shell and bake until firm, about 35 to 40 minutes!.

Meringue:
Add the salt, vanilla and the lemon juice to egg whites!. Beat until foamy!. Add 6 tablespoons sugar, 1 at a time!. Beat until sugar dissolves and mixture forms stiff peaks!.

Praline Topping:
Combine the sugar, corn syrup, butter and vanilla in a medium saucepan!. Cook and stir on medium heat until butter is melted and mixture is blended!. Remove from heat!.

Spoon dollops of meringue in ring around outside edge of pie!. Sprinkle pecans over the center of the pie!. Drizzle all or part of the praline topping over the nuts, as desired!. *Chocolate Sweet Potato Pie

2 cups cooked sweet potatoes
1 teaspoon baking powder
2 eggs
1/3 cup margarine
1/3 teaspoon salt
1/2 cup flour
1/3 cup milk
5 1/3 tablespoons cocoa
1 tablespoon vanilla
2 cups sugar
***Topping***
1 1/3 tablespoon flour
1 1/3 tablespoon butter
1/3 cup brown sugar
1/3 cup coconut

Mix all ingredients except those for the topping and put in an unbaked pie shell!. Bake at 300F degrees for 45 minutes, until crust begins to brown!.
Remove from oven!. Mix topping ingredients until crumbly!. Sprinkle this over top of pie and return to oven until bubbly!.

*Low Calories Sweet Potato Pie

Pastry for single-crust 9-inch pie
2 cups cooked, mashed sweet potatoes (about 2 lbs!.)
2 eggs, lightly beaten
7-1/4 teaspoons Equal? for Recipes
or 24 packets Equal? sweetener
or 1 cup Equal? Spoonful?
1 tablespoon flour
1 teaspoon lemon juice
1 teaspoon vanilla
1/2 teaspoon ground cinnamon

*Sweet Potato Pie

1 (1 pound) sweet potato
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 eggs
1/2 teaspoon ground nutmeg

1 (9 inch) unbaked pie crust

Boil sweet potato whole in skin for 40 to 50 minutes, or until done!. Run cold water over the sweet potato, and remove the skin!.
Break apart sweet potato in a bowl!. Add butter, and mix well with mixer!. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla!. Beat on medium speed until mixture is smooth!. Pour filling into an unbaked pie crust!.
Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean!. Pie will puff up like a souffle, and then will sink down as it cools!.

2 Onions thinly sliced
500gr Beef or Chicken mince (lean)
2 Tablespoons plain flour 2 Tablespoons Tomato Paste
2 Tablespoons Hot Sauce 2 Stock Cube (Beef or Chicken)
2 Cups Water
6 to 8 Potatoes cooked and mashed

Lightly sauté onion and add mince, cook until well browned!. Add the plain flour and stir for 2-3 minutes!. Add the tomato paste, hot sauce, stock cube and 2 cups water!. Stir and bring to the boil!. Reduce heat and simmer for 20 minutes, stir occasionally to stop sticking!. Pour into casserole dish and cover with mashed spud, (as much as you like)!. Serve and devour, (some like to eat this with tomato sauce)!.

2 C!. shredded hash browns
1 C!. shredded cheddar cheese
1/2 C!. shredded Monterey Jack cheese
1 tsp!. salt, divided
5 eggs
1/2 C milk

Preheat oven to 350°F
Combine potatoes, 1/2 cup cheddar cheese and 1/2 teaspoon salt!.
Press into the bottom and up the sides of a greased 9-inch pie plate!.
In a bowl, beat eggs and milk!.
Add remaining cheeses and salt then pour over potato crust!.
Bake for 50 minutes or until a knife inserted near the center comes out clean!.
Let stand 5 minutes before cutting!.

*Potato And Egg Pie

-Crust
1 C all purpose flour
1/4 C margarine
2 tsp salt
1/2 C cold water
-Filling
3 hard boiled eggs , chopped
2 potatoes , boiled , chopped
1 Big onion
ginger and garlic 1 tsp
chilli pwd 1tsp
masala pwd 1 tsp
salt 1 tsp

-Crust
Mix everything and form a dough and chill for 1 hour
-Filling
Fry the onion !. Add the masalas and ginger-garlic paste
Add the potatoes and salt !. Mix well !.
Pre heat the oven 175 degrees
Roll the dough and line a 9 " pie pan !.
Spread the filling on top !.
Arrange the eggs on top !.
Bake for 1 hour !.
Serve hot !.
