Why do you marinate chicken in buttermilk before flouring and frying it?!
In most fried chicken recipes it calls for the chicken to marinate in milk or buttermilk for several hours before flouring and frying it!. What does the milk or buttermilk DO!? Is it necessary!? Could I use something else!.!.!.broth, juice, vinegar!? Will the results be the same or does it have to be dairy to be good!?Www@FoodAQ@Com

the buttermilk is used to tenderize, or soften, the chicken!. i usually don't marinate it, i just dip it into the liquid!.
it also helps the flour stick to the outside of the chicken so you get a thicker coating!.
i have used many other things besides buttermilk!. some suggestions are regular milk, egg, honey (mix 1/4 cup honey with 1/4 cup water), ranch dressing, Italian salad dressing, balsamic vinegar!. They each will add a slightly different taste to the food!. my family really enjoys the honey fried chicken!.Www@FoodAQ@Com

My mom never considered marinating any of her meats and they all tasted wonderful! I choose to marinate because I'm a different kind of cook and like to try different flavors!. Buttermilk is acidic and breaks down the meat fiber!. It can create a more moist and flavorful chicken!. It also helps the coating to adhere!. You can accomplish this by also creating an egg wash (egg and water) to dip in before you coat in flour!. Consider adding seasoning salt to the flour, along with garlic, oregao, fresh ground pepper, and some Italian bread crumbs to enhance the flavor!. You can also create a brine for your poultry that consists of water, or a mixture of wine and water or applejuice, salt, and herbs!. Place your poultry in it and leave for several hours but not more than 24!. Rinse the meat and pat dry before cooking!. Do you don't have to use butermilk or milk!. You can even use water when you bread it!. And just do it straight away with out any marinating!.Www@FoodAQ@Com
