Good asparagus quiche recipe?!


Question: Good asparagus quiche recipe!?
I do not have bacon!. I have a handful of morel mushrooms to add!. I also have a pre-made crust I need to use!. Thank you for your help!Www@FoodAQ@Com

Spinach and Asparagus Quiche

For the batter:
2 tablespoons sour cream
1 tablespoon salt
2 1/2 cups half-and-half
8 eggs
1 tablespoon pepper
Pinch nutmeg

For the crust:
1 pre-made pie crust

For the filling:
3/4 cup spinach, blanched, chopped and any excess water removed
6 spears asparagus, chopped
3 cups grated Gruyere or Swiss cheese

For the batter:
In a medium mixing bowl, beat together the sour cream and the salt!. Add the half-and-half, eggs, pepper, and nutmeg!.

For the crust:
Preheat the oven to 350 degrees F!.

Place a pie tin on top of the pie crust and turn the crust upside down!. Place this inverted pie crust in the oven to bake for approximately 10 minutes or until edges begin to lightly brown!. Remove from oven and allow to cool!.

To assemble:
Mix the filling ingredients together!. Fill the blind baked pie shell with the filling!. Slowly pour some of the batter over the top of the filling, being careful not to have the batter flow over the edges of the crust!. Bake for 45 minutes until puffed and browned!.

Asparagus Quiche


A delicious quiche from France!. It can be eaten as a starter or main meal!. Ideal for lunches, picnics or parties!.
Suitable for vegetarian

12oz ( 340g ) short crust pastry, homemade or frozen
1 lb ( 450 g ) asparagus
2 large eggs
5 tablespoons of cream
5 tablespoons of milk
1 cup of freshly grated hard cheese, parmesan or cheddar
salt and freshly ground pepper

preheat oven a : 200 c ( 400 f - gas 6 )

1!. grease a flan dish 10 in ( 26 cm ) and dust with flour
2!. roll out the pastry and line the flan dish
3!. place in refrigerator and chill for 1/2 hour
4!. cut asparagus into 1 in pieces, leaving tips 2 in long, discarding hard parts
5!. boil for 5 -7 minutes in salted water, drain and put aside
6!. bake pastry blind ( line raw pastry with foil or greaseproof paper and fill with dried beans or cooking beads to prevent the pastry from rising ) for 15 minutes
7!. mix eggs, cream, milk, some of the grated cheese and salt and pepper together
8!. turn oven temperature to 150c ( 300F - gas 2
9!. place asparagus into pastry and pour the mixture over, adding the rest of cheese on top
10!. bake in the middle of the oven for 40 minutes, until well risen and golden brown!.

1!. 1 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
2!. 10 slices bacon
3!. 2 (8 inch) unbaked pie shells
4!. 1 egg white, lightly beaten
5!. 4 eggs
6!. 1 1/2 cups half-and-half cream
7!. 1/4 teaspoon ground nutmeg
8!. salt and pepper to taste
9!. 2 cups shredded Swiss cheese

Preheat oven to 400 degrees F (200 degrees C)!. Place asparagus in a steamer over 1 inch of boiling water, and cover!. Cook until tender but still firm, about 2 to 6 minutes!. Drain and cool!.
Brush pie shells with beaten egg white Sprinkle chopped asparagus into pie shells!.
In a bowl, beat together eggs, cream, nutmeg, salt and pepper!. Sprinkle Swiss cheese over asparagus!. Pour egg mixture on top of cheese!. 5!. Bake uncovered in preheated oven until firm, about 35 to 40 minutes!. Let cool to room temperature before serving!.
