~ Mango Pudding ~


6 mangoes, chopped
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1 cup plus 2 tablespoons sugar
1 envelope unflavored gelatin
4 cups heavy cream

Preparation
1!. Place first 3 ingredients in a large saucepan over medium heat, and sauté 5 minutes or until mango is very soft!.

2!. Add sugar, and continue cooking, stirring and scraping bottom of saucepan frequently, 12 to 15 minutes or until thick and syrupy with a few chunks of mango remaining!. (Do not let sugar caramelize or brown!.) Remove from heat, and cool to lukewarm!.

3!. Sprinkle gelatin over 3 to 4 tablespoons cold water in a small bowl, and let soften 3 to 5 minutes!. Stir softened gelatin into mango mixture until dissolved!. Add cream, and stir until blended!.

4!. Divide mixture among 10 (4-ounce) ramekins or serving bowls!. Chill, uncovered, 3 hours or until set!. Serve cold, topped with Sweetened Condensed Milk Chantilly


~ Sweetened Condensed Milk Chantilly ~


Ingredients

1 cup heavy cream
2 tablespoons sweetened condensed milk
1/8 teaspoon salt
Preparation
Whisk cream using a heavy-duty stand mixer until soft peaks form!. Add condensed milk and salt, and whisk until medium-soft peaks form!. (When you lift whisk from cream, a peak should form and the tip should fall back down!.) Use immediately!.

Chinese Mango Pudding

Prep Time: 15 minutes
Cook Time: 3 hours, 00 minutes
Ingredients:
2 envelopes (1 tablespoon) unflavored gelatin
3/4 cup (175 mL) sugar
1 cup (250 mL) hot water
3 cups (750 mL) pureed fresh mangoes
1 cup (250 mL) 2 percent evaporated milk
8 ice cubes
lime wedges, optional
fresh mango slices for garnish, optional
Preparation:
Add gelatin and sugar to hot water and mix until dissolved and smooth!.
In large bowl, mix mango puree, evaporated milk and ice cubes!. Pour gelatin mixture into mango mixture and stir until ice cubes are melted!.
Pour mixture into jelly mould and chill until set, at least 3 hours!. To serve, dip jelly mould briefly in hot water then turn pudding out onto platter!. Squeeze on some lime juice, garnish with mango slices if desired and serve!. (Best eaten within a day)!. Serves 8!.Www@FoodAQ@Com
