I'm making bread and the recipe calls for 3 TBS of butter, should I use applesauce or oil instead?!
What is better butter, oil or applesauce!?!? What does it doWww@FoodAQ@Com
Answers:
Butter or some kind of fat is necessary for good tasting yeast bread!. Oil would do basically the same thing but with less flavor and the texture of your bread would be somewhat different!. The only reason one would use applesauce is to reduce the fat content!. Namely, people on a diet!. My suggestion is to use the butter!. You're making me hungry!.Www@FoodAQ@Com
IF it's a yeast bread, you can't substitute applesauce or oil!. You might be able to do another type of solid fat, like shortening, lard , or margerine!.
But in a yeast bread recipe, the butter is like a shortening that shortens the gluten strands in your dough!. If you don't use it the texture won't be right, and you can't get the same effect from applesauce or oil!.
also, the butter helps hold in moisture to keep the dough from staling!. Applesauce won't work because it will just dry out, and oil won't work because it is a liquid!.Www@FoodAQ@Com

You need oil for many reasons in bread!. One, it keeps the bread from going stale faster, gives great flavor and color!. Please don't try to use applesauce for a bread recipe that called for yeast, you will add too much moisture and ruin it!. You may use olive oil in yeast bread, you do the same as you would with butter!. Its great!.Www@FoodAQ@Com
You can use about 1/3 cup of plain nonfat yoghurt!. I have done this in my yeast-bread recipes and like the result!. Sour cream also works, if that helps!. Use about the same proportion!. You need more of the yoghurt than of the butter, usually about double, I think!. That's what I do!.
The yoghurt also gives a slightly softer crust than margarine or oil!.Www@FoodAQ@Com

In most baking recipes, i'd stick to what the recipe call for!.
If you really want to use oil, it doesn't hurt to experiment with this recipe or find a recipe that calls for oil as the fat of choice!.
I wouldn't use applesauce for bread though!.

i would say applesauce, but if it's a yeast bread, i'm not sure, sometimes i omit any oil or butter a recipe calls for all together and it turns out fineWww@FoodAQ@Com
