Tips on how much flour to add to my wheat bread?!


Question: Tips on how much flour to add to my wheat bread!?
I think I added too much flour!. It is still sticky but doesn't stretch more then a couple of inches before breaking!. Tips for the next time or tips to fix this!. My bread is rising now!.Www@FoodAQ@Com

Did you use 2 parts white bread or AP flour to 1 part whole wheat flour!? If not that could be one reason why the gluten has not formed a streachy dough!. The only other reason is you didn't knead your dough long enough usually 10 to 15 minutes by hand should do it!.Www@FoodAQ@Com

peggy -- If you are buying the whole wheat flour off the grocery shelf!. It doesn't have enough gluten in it to make a stretchy dough!. the only way to fix the problem is to add white bread flour or all purpose flour to the whole wheat flour!. I use a mix of 2 parts
bread flour and 1 part whole wheat flour plus 2 Tble!. spoons of wheat bran for each loaf that the recipe makes the bran adds more fiber!. If you are using all purpose flour add 1Tble!. spoon of vital wheat gluten
with Vitamin C for each loaf also!. You can find it near the flour at your local wall-mart store it is made by HODGSON MILL!.
Kneed dough as usual before the first rise!.

Sounds like your yeast is dead!. Bread dough shouldn't break; if it doesn't stretch it means the yeast isn't working and could be dead or nearly dead!. I don't think flour is the problem!.Www@FoodAQ@Com
