Heat oil in a deep skillet over medium heat!. Saute rice, onion, and bell pepper until rice is browned and onions are tender!.

Easy Spanish Rice
This is so easy to make, you'll wonder how you ever made tacos without this savory side dish!.


* 1 1/2 cups rice
* 2 1/2 cups chicken broth
* 1 cup plain tomato sauce*
* 3 cloves finely chopped garlic *
* 1/4 of a medium onion*
* 2 tablespoons oil
* 4 heaping tablespoons of finely chopped parsley (optional)

PREPARATION:
In a medium sauce pan, heat oil over medium heat!. Add in the fresh garlic and onion!. Saute for 1-2 minutes until softened!. Add in dry rice!. Stir for about 5 minutes until rice becomes a golden brown color!.

Add in broth and tomato sauce (Slowly into rice, not directly onto hot pan!) Add in the parsley if you're using it!. Stir it up and bring to a boil!. Once it starts boiling, turn the heat to low and cover!. Let it simmer for 20 minutes and fluff with a fork!.

*If you don't have fresh garlic or onions on hand you can use the equivalent in powder form!. Do not saute the powder, just skip that step and add the garlic powder and/or onion powder when you add the liquids!. If you don't have tomato sauce you can use unseasoned stewed tomatoes, or canned diced tomatoes with their liquid!.Www@FoodAQ@Com

MEXICAN RICE
Ingredients:
? 1 ? cups white rice
? 1/3 cup vegetable oil
? 1 ? cup tomatoes, roughly chopped
? ? small onion
? 3 garlic cloves
? Salt and pepper
? About 3 ? cups chicken broth
? Optional: Minced carrots, sweet corn, peas

Preparation:
Pour hot water to cover the rice and let it stand for 5 minutes!. Drain the rice and rinse well in cold water, then shake the colander well and leave the rice to drain for a few minutes!.
Heat the oil!. Stir the rice into the oil until the grains are well covered, then fry until just turning color, stirring and turning the rice over, about ten minutes!. Do this over high heat!. Tip the pan to one side and drain off any excess oil!.
Blend the tomatoes, onion and garlic until smooth, then add to the fried rice continuing to cook over high heat, stir and scrape the bottom of the pan until mixture is dry!.
Add the broth, vegetables, and salt and pepper to taste!. Stir well and DO NOT stir again during cooking time!.
Cook over medium heat, covered, until the liquid has been absorbed and small air holes appear in the rice!. Remove pan from heat and keep covered with a tightly fitting lid so that no steam can escape and set aside for 20 minutes!. DO NOT UNCOVER UNTIL THE 20 MINUTES HAVE PASSED, the rice will continue cooking with its own steam!.
For best results, use real chicken broth, but you can substitute with canned broth or boullion cubes (I would recommend "Knorr Suiza" brand, in the latin food section of your supermarket)Www@FoodAQ@Com

None of the recipes listed above are a traditional hispanic families recipe of making spanish rice!.

In my family, (we're puetro-rican), you learn to cook rice very early! Here's my recipe!.

You'll need:
Vegetable Oil
2 cups rice
2 small cans of Salsa De Tomate by Goya
2-4 packets of Sazon Seasoning by Goya (the more packets, the more flavor, the more your rice will turn color)
1 can of Goya Beans!. We use Gandules!. They're pigeon peas!.
Adobe seasoning by Goya!.


First, you will put enough vegetable oil to fill the bottom of the pan!. Then, you will add the rice, 2 cans of salsa de tomate, the beans, and then fill the can that had the beans with water and dump into the pot as well!. The flame should be on medium heat!. You then will add the Sazon seasoning packets and sprinkle Adobe seasoning in the rice, mix well!. Cover the pot and allow to simmer!. Check every 8 minutes or so, and mix everytime you check!. Eventually, you will see that the rice is cooked, you'll know by the rice texture and the smell!. =) Enjoyyy!.Www@FoodAQ@Com

1 med box of instant rice (9 serving size)
1 24 oz jar Pace picante sauce
1-2 lbs lean ground beef, cooked and seasoned with your fave Mexican seasoning mix

Add all ingredients together in a large pot!.
Bring to a boil, lower heat to a simmer!. Allow to simmer until rice is tender!.
