I do the basic traditional recipe; with mayo, mustard, green onion, bit of celery if I have it then I put a very little bit of Worcestershire sauce in it!. About a teaspoon!.Www@FoodAQ@Com

6 eggs
1/4 cup mayonnaise, plus extra, if you like, for spreading
1 teaspoon Dijon mustard
1/2 lemon, juiced
Salt and freshly ground black pepper
8 slices whole grain bread, toasted
1 avocado, halved, peeled, seeded and sliced lengthwise
1/2 bunch watercress, stems trimmed

Cook the eggs 10 minutes in a saucepan of simmering water to cover!. Drain, cool under cold running water, and peel!. Roughly mash the eggs in a bowl with the mayonnaise, mustard, and lemon juice!. Season with salt and pepper!.

Spread 4 slices of toast with mayonnaise, if you like!. Arrange about 1/4 of the avocado slices on each!. Spread each with 1/4 of the egg salad and arrange watercress sprigs on top!. Top each sandwich with another slice of toast and serve!.Www@FoodAQ@Com

If you add too many things to your egg salad mixture, you kind of lose the egg, because it's fragile and doesn't have a strong flavor of its own!. So when I want extraordinary egg salad, I think the key is to use homemade mayo!. This is soooooo easy to do!. You can make it in less than 2 minutes!. Put about a teaspoon of mustard in a bowl with one egg yolk, and whisk them together!. Then, while you're whisking steadily, add a slow stream of oil (canola, peanut, grapeseed or walnut are good choices--olive can be a little too strong)!. Within a minute or two the mixture will start to get creamy and thick!. When the consistency is how you like your mayo, stop adding oil!. You can then whisk in a teaspoon or two of lemon juice or vinegar to finish it off!. THis will really set your egg salad a part, but remember to eat it within 24 hours because the mayo is a little unstable with the raw egg yolk!.Www@FoodAQ@Com

i absolutely love egg salad sandwiches!. My fav recipe is to boil the eggs, chop not too finely!.!. add a bit of mayo, celery seed, sweet relish or green tomato relish!. Toast the bread lightly!. NO MUSTARD please :) Add a nice leaf of lettuce and if you wish, tomato slice!. Serve with either dill or sweet pickle!.


However!.!. funny story!. My roomy and I had just moved in and I added the sweet relish to my egg salad!. To this day it is an ongoing debate about the sweet relish!. We compromised with the green tomato relish which me made from our garden tomatoes!. To each their own eh!?Www@FoodAQ@Com

6 cold hard boiled eggs-----peel and dice up the egg white, set aside!.

put the egg yolk in a bowl!.!.!.!.!.!.mix about 1/2 cup of mayonnaise!.!.!.!.!.!.!.a teaspoon of mustard!.!.!.!.!.!.salt and pepper to taste, a stock of finely diced celery, 2 tablespoons diced red onion, a few black and green olives diced up!.!.!.!.!.!.!.1 small dill pickle diced up!.!.!.!.!.!.!.a few sliced jalapenos diced up!.!.!.!.!.after all of this mixture has been well blended!.!.!.!.!.!.!.!.fold in the diced up egg white!.!.!.!.!.!.

I like to lightly toast any type of bread!.!.!.!.!.!.and spread butter on each side!.!.!.!.!.!.!.lay some spinach leaves on one side and romaine lettuce leaf on the other side!.!.!.!.!.put your egg mixture on one half!.!.!.!.!.!.!.!.!.close and eat!!!!!!!!Www@FoodAQ@Com

The simpler the better for me with egg salad!.

Boil your eggs, peel, chop and add to a bowl with mayonnaise, pickle relish (sweet), salt and pepper to taste and a dash of hot sauce if you like!.Www@FoodAQ@Com

I like to add a bit of mustard to my egg salad (chopped eggs and mayo) to give it some tang!. Love it in a sandwich with tomato and lettuce slices!.
