Question: Panini recipes!?
I got a george foreman grill to make panini and grilled sandwiches!. Anyone have any recipes for me to try!? I have all kinds of bread, cheese and ingredients!.Www@FoodAQ@Com

Vegetable And Mozzarella Panini Recipe

Ingredients :

1 sweet red pepper halved seeded and cut into six strips
1 medium zucchini cut into long strips
1 eggplant cut into long strips
3 tablespoons olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 thin French baguette
3 cups fresh mozzarella cheese sliced into thin even slices
1/4 cup fresh basil leaves
1 tablespoon balsamic vinegar


Directions :

Brush vegetables lightly with some of the olive oil then season with salt and pepper and grill over medium heat for 5 minutes on each side!.
Remove vegetables from grill and cool for several minutes!.
Slice bread open lengthwise and brush both insides lightly with olive oil then lightly grill the insides of the bread about 1 minute!.
Assemble the still warm sandwich by alternating layers of vegetables, mozzarella cheese and basil!.
Sprinkle with remaining oil and a few drops of vinegar!.
Tightly slice widthwise into eight sections!.

Roast Beef And Sun Dried Tomato Mayo Panini Recipe

Ingredients :

1/4 cup mayonnaise
2 tablespoons oil-packed sun-dried tomatoes, minced
1 tablespoon prepared horseradish
1 tablespoon ketchup
pinch of cayenne
1/3 cup red onion, slivered
1/3 cup pickled sweet cherry peppers, sliced
pinch of red pepper flakes
4 sliced sourdough bread, 1/2-inch thick
1/2 cup shredded cheddar cheee
6 ounces roast beef, deli-sliced thinly


Directions :

In a bowl, combine mayonnaise, tomatoes, garlic, horseradish, ketchup and cayenne!.
Mix well!.
In a small bowl, toss onion, peppers and pepper flakes together!.
Drizzle with some of the pickling juice from the peppers!.
Let stand for 5 minutes!.
Spread butter on one side of each bread slice!.
Spread mayonnaise on the other side!.
Sprinkle cheese then top with the roast beef slices!.
Top roast beef with the pepper salad mixture!.
Place other bread slice on top of pepper mixture, buttered side up!.
Toast on both sides using a heavy skillet on top of sandwich as a weight!.
When first side is golden brown, flip , reweight with skillet and finish toasting!.Www@FoodAQ@Com

Best one I know of is just straight ham and cheese!. I also add tomato in there with much success!. Yum!Www@FoodAQ@Com
