Broccoli Cheese Rice Casserole
INGREDIENTS
2 (10 ounce) packages frozen chopped broccoli
3 cups instant rice
1 (10!.75 ounce) can condensed cream of mushroom soup
1 (10!.75 ounce) can condensed cream of chicken soup
1 1/4 cups water
1 (16 ounce) package processed American cheese, cubed
1 tablespoon butter
1 bunch celery, chopped
1 large onion, chopped
salt and pepper to taste
DIRECTIONS
Cook broccoli and rice according to package directions!. Preheat oven to 350 degrees F (175 degrees C)!.
In a medium saucepan over low heat, mix cream of mushroom soup, cream of chicken soup, and 1 1/4 cups water!. Gradually stir in cheese until melted!. Be careful that the cheese doesn't burn!.
Melt butter in a large skillet over medium-high heat, and saute celery and onion until soft!.
In a large mixing bowl, combine broccoli, rice, soup and cheese mixture, celery and onion!. Season with salt and pepper!. Pour mixture into a 9x13 inch baking dish!.
Bake in the preheated oven for 45 minutes, until bubbly and lightly brown!.

Veggie / Rice Casserole
1 pkg California Blend (broc!., caul!., and carrots)
1 pkg Uncle Ben's Long Grain and Wild Rice - NOT the quick cook kind
1 can Cream of Mushroom Soup
1 small can water chestnuts (optional)
1 8 oz pgk cream cheese
1 cup cheddar cheese
Bread crumbs (optional)
Prepare rice, but using 1/2 cup LESS water and cooking 10 minutes less than directed on box!.
In a large bowl, combine cooked rice, vegetables, soup and water chestnuts!. Pour into a baking dish (a 9 x 13 pan is a little big for this recipe, but you can use it if you don't have something smaller - just adjust the cooking time down a bit)!.
Using a knife, cut off small pieces of cream cheese and push down into casserole in various places - I usually space it so ever inch or so gets a little cream cheese!. I find that I don't really need the whole package of cream cheese unless I've added more veggies to the recipe, but you can do it according to your taste!.
Cover with foil and bake at 350 for about 20 minutes!. Remove foil and pour cheddar cheese and, if desired, bread crumbs, on casserole!. Bake uncovered for an add'l 10 minutes!.

Shrimp Fried Rice
INGREDIENTS
1 1/2 cups uncooked white rice
3 cups water
4 tablespoons vegetable oil
1 cup fresh bean sprouts
1/2 cup chopped onion
1 1/2 cups cooked medium shrimp, peeled and deveined without tail
1/4 cup chopped green onion
2 eggs, beaten
1 teaspoon salt
1/4 teaspoon ground black pepper
4 tablespoons soy sauce
1/4 teaspoon sesame oil
DIRECTIONS
In a saucepan bring water to a boil!. Add rice and stir!. Reduce heat, cover and simmer for 20 minutes!. Set aside and allow rice to cool!.
Heat a large skillet or wok for 2 minutes!. When the skillet or wok is hot, pour in vegetable oil, bean sprouts and onions!. Mix well and cook for 3 minutes!.
Mix in cooled rice and shrimp and cook for another 3 minutes!. Stirring constantly!.
Mix in green onions, eggs, salt, pepper, soy sauce and sesame oil!. Cook for another 4 minutes, stirring continuously, until eggs are cooked and everything is blended evenly!.

1 cup uncooked long-grain rice
1 (10!.5 ounce) can condensed French onion soup
1 (10!.5 ounce) can beef broth
1 (4 ounce) can sliced mushrooms, drained
1/4 cup butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
Combine rice, onion soup, beef broth, mushrooms and butter in an 8x8 inch casserole dish!.
Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes!.

4 cups cooked rice
1 can SPAM, cubed and fried
3 eggs, scrambled
1/2 onion, thinly sliced
garlic
soy sauce
salt and pepper to taste
vegatable oil

!.!.!.instead of cooking your rice with water!.!.!. use chicken broth or beef broth!.!.!. ummm, good!. then season it with what ever you like!.!.!.Www@FoodAQ@Com
