Brain - etc is not popular these days !. Is it because cooks have lost the art of cooking this!? Or has it more to do with say

I was watching a show on the History channel yesterday and it was about pigs!. I know, I know, I should get a life!! Anyway, they said the offal was sold overseas because American butchers didn't sell most of it!. If they don't sell it, how can people know if they'd like it or not!? Not everyone is afraid to try something new!
I love tongue, and pickled pigs fee, and sweetbreads!. I don't like liver though!. My husband loves Rocky Mountain oysters, but I just don't like their taste!. My oldest daughter likes the home made haggis her Scottish friend makes, but I've never had the opportunity to try it!.Www@FoodAQ@Com

You can still get them, but you have to ask for them, I really am not sure, I know that in mediteranian countries it is because they think these parts are bad for you to eat, liver and kidneys are a big no no but they will eat brain heart and tripe!. But maybe it is more a case of a lot of modern recipes do not call for these items, and more likely, nobody knows how to cook them or prepare them, Great question BTW!Www@FoodAQ@Com
No problem with any of those, but my sister-in-law would eat liver although she never cooked it because she couldn't touch it raw!.

We are victims of our own success!. We don't have to use an animal from tail to nose!. We work hard for our money - and many have to work long hours before going home to cook for their families!. We don't have time or interest to do things which are less popular with the family!.
There are still cooks who know quite well what to do with these cuts!. But there isn't much of a demand or market in the UK as there may be on the continent!. I don't think the reason these cuts aren't popular has anything to do with either of your suppositions!. These cuts aren't popular because rationing and the need to use all morsels of our animals went out with the boom in the fifties!. It's nearly a no-brainer to guess the outcome if faced with the choice between a good juicy steak or sweetbreads

Yes, I do think the publicity about diseases in animals has something to do with it, not least Mad cow disease!. Offal is still widely used by chefs in restaurants though and steak and kidney pie is still a favourite with many people, especially in the UK!.

People are very disconnected from where meat comes from!. They get it nicely cut up and packaged so they never really have to think about the animal that died!. Eating something called liver or tongue kind of wrecks that!. So people don't do it!.
But they should!. It tastes nice!.

Offal meats have stronger flavors and different textures, which a lot of people find off-putting!. That's why white meat chicken is so popular!.!.!. very little flavor of its own, and the texture doesn't remind you of the fact that you're eating an animal!.Www@FoodAQ@Com
