Veggie Frittata
4 to 6 servings

8 eggs, beaten
1 cup chopped broccoli (fresh or frozen)
1 small onion, chopped
1 small red bell pepper, chopped
1/4 cup (1 ounce) grated Cheddar cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
2 tablespoons butter

In a large bowl, combine all the ingredients except the butter; mix well!.
Melt the butter in a 10-inch nonstick skillet over medium heat; pour the egg mixture into the hot skillet!. Reduce the heat to medium-low, cover, and cook until the mixture is solid, about 25 minutes!.
Turn frittata out of the skillet and cut into serving-sized wedges
SPINACH FRITTATA
2 eggs, well beaten
1/2 c!. cooked frozen chopped spinach, squeezed
1/4 c!. chopped fresh parsley
1/4 tsp!. salt
1/8 tsp!. minced fresh garlic
Dash each of pepper & ground nutmeg
1/4 c!. chopped scallions
In bowl combine eggs, spinach, parsley, salt, garlic, pepper and nutmeg!. Spray Pam in 12 inch non-stick skillet that has a removable or flameproof handle!. Add scallions and saute 2 minutes!. Pour in egg spinach mixture!. Cook over moderately high heat, briskly shaking pan back and forth to prevent sticking!. When underside is lightly browned, broil for a few minutes until Frittata is set!. Serve with 1 cup tossed salad!. Serving = 4 ounces protein, 1 cup vegetable, 1 cup salad!.Www@FoodAQ@Com
