You can use one rectangular pan, or 2 square pans, or 2 loaf pans!. If you're using one 8" or 9" pan, there will be too much batter in the pan, causing it to overflow in the oven and make a mess!. That's why the directions show to use 2 round pans!. You can use one larger round pan, but you'll need to adjust the baking time - and the middle might still not be done while the outer edges are done!.Www@FoodAQ@Com
Do you know what size your pan is!? I'm assuming that it's a 10" pan that's about 3 inches high!. You can make the cake in that pan!. Just make sure that the batter doesn't go up more than 2/3 of the pan!. Use the same temperature and it will take about 50-55 minutes to cook!. Set the timer for 50 and check with a toothpick every 2-3 minutes!. The toothpick should come out clean!. (You might have a couple of crumbs on it- that's fine- just don't have any wet batter)!. Basically, cooking in your one pan is like cooking in a bundt pan!. It will come out just fine!.Www@FoodAQ@Com
u can use that one pan to make half of the batter then when you remove it pour the rest of the batter in, after you grease it again, but its not recommended!. you should pour the batter in right after you mix it!. i HAVE done the other before and nothing happened when i only had one round pan!.Www@FoodAQ@Com
THE COOKING TIME WOULD BE DIFFERENT!.!.!.THE CENTRE MIGHT NEVER COOK ALL THE WAY THROUGH
AS WELL THE BATTER WOULD MOST LIKELY OVERFLOW AND CREATE A HUGE MESS IN THE OVEN!
THERE IS JUST TOO MUCH BATTER FOR THE ONE PAN!.!.!.
YOU COULD USE
- A RECTANGLE PAN (9X13) IF YOU DON'T HAVE 2 ROUND ONES
-A BUNDT PAN

If you have the right size pan it will work fine!. I have a 10" round pan that is 3" deep and works for making a box mix in one pan!. It just takes a littte longer to bake!.Www@FoodAQ@Com
It's better to use 2 pans because if you cut the big round cake you'll have to deal with the crumbs!. The one pan method will take a lot longer to bake also!.Www@FoodAQ@Com
