I personally use the Ragu alfredo sauce, so I don't know how to make homemade sauce if that's what you're asking!.!.!. but I cube the chicken and fry it in butter till it's nice and golden, then add it to the noodles and sauce and heat!.Www@FoodAQ@Com

Chicken and Broccoli Alfredo (if you don't like broccoli, just leave it out)

Ingredients

4 to 5 cups broccoli florets (from about 1 large bunch)
2 tablespoons olive oil
4 skinless boneless chicken breast halves, cut crosswise into 1/2-inch-wide strips
1 large red bell pepper, thinly sliced
1 2/3 cups whipping cream
1 1/2 cups grated Parmesan cheese
1/2 cup grated Monterey Jack cheese
3/4 pound penne or mostaccioli, freshly cooked

Preparation

Steam broccoli florets until just tender, about 3 minutes; set aside!.

Preheat broiler!. Butter 13x9x2-inch broilerproof baking dish!. Heat 2 tablespoons olive oil in heavy large Dutch oven over medium-high!. Working in batches, sauté chicken strips until just cooked through, about 4 minutes!. Transfer chicken strips to bowl!. Add sliced red bell pepper to Dutch oven and sauté until just tender, about 5 minutes!. Add whipping cream, 1 cup grated Parmesan cheese and all of Monterey Jack cheese!. Simmer until sauce thickens slightly, about 5 minutes!. Add chicken strips and any juices in bowl to sauce!. Add freshly cooked pasta and steamed broccoli florets and toss until sauce coats mixture, about 3 minutes!. Season to taste with salt and pepper!. Transfer pasta mixture to prepared baking dish!. Sprinkle remaining 1/2 cup grated cheese over!. Broil until just golden on top, about 3 minutes, and serve!.Www@FoodAQ@Com

Traditional alfredo sauce is so simple to make, but very rich!.

for an average family, saute the cut chicken, slowly in butter over medium low heat!. add cream and parmesan cheese!. salt pepper to taste!. heat until cheese is melted!. serve over cooked pasta!.

need: one pound cut-up chicken, stick of butter, 1/2 cup cream, 6oz of cheese!.

There is no cream cheese, cheddar or monterey jack in traditional alfredo, just parmesan, period!.Www@FoodAQ@Com

Ingredients
3 boneless chicken breasts
8 oz!. cream cheese
8 oz!. cup of butter
8 oz!. cup parmesan grated cheese
1/2 cup milk
salt & pepper
1 Ib fettucine
vegetable oil for frying

Directions
Cut chicken into strips and season generously with salt and pepper!.
In a large frying pan, heat about 1 tbsp of oil and place in chicken taking care not to overcrowed the pan!. (if necessary, prepare in 2 batches) and fry until fully cooked!.
At about the same time that the chicken is started, begin heating the butter and cream cheese in a medium sauce pan!.
When the cream cheese is soft, add the parmesan cheese and milk and stir until smooth!.
Cut the chicken into pieces and stir into sauce, then heat to a boil stiring frequently!.
Add salt to boiling water and stir in pasta!. Boil until tender stiring frequently so the pasta doesn't stick!.
When everything is finished!. plate the pasta and spoon sauce over the top!.Www@FoodAQ@Com

Sometimes I make my own sauce sometimes I use Ragu!.!.!.but I grill my chicken 1st then add it to the pasta and sauce and heat!.!.Www@FoodAQ@Com
