Yup, it's a workout but worth it!.
Right, before you even think about it, you gotta have some stuff—a 3 X 9 ? - 10” round pan, spring form or no, an udder pan, big enough to provide a water bath for the aforementioned pan, be it round or rectangular, and a food processor or mixer capable of handling bulk and some parchment paper!.
So here we go!. To make the crust, toast up enough pecans to yield ? C finely chopped, almost dust!. Add 1C graham cracker crumbs, 1/4 C melted butter and 3T sugar!. Reserve a couple of T of this stuff!.
“Pam” the aforementioned pan and dust with the aforementioned 2T reserve on the sides and bottom!. Now line the bottom with a parchment round and “Pam” again!. Press the crust mixture into the bottom of the pan with a rubber or silicon spatula and set aside!.
Now it’s time to make the cake bit!. Cream 3 ? pounds of softened cream cheese with 1C sugar and 1T cognac vanilla until reasonably fluffly!. Add 4 eggs, 1 at a time, whip and blend in 1/2C sour cream!.
Pour this into the set aside pan and smooth out the top with the spatula!. If you have a spring form pan, wrap the bottom and sides tightly with foil so the water bath doesn’t leak in!. Put the cake pan in the bath pan!.
Bake @ 300F, Gas mark 2, for 2 ? hours in a hot water bath ~ 1 ?” up the sides of the pan!. The cake pan should be taller than the bath pan!. Carefully remove from bath and set on rack!. Run a thin knife around sides to loosen and cool to room temp, then refrigerate!.
You can top it any way you like, berries or whatever!. I rather like to make a glaze of 2C raspberries, a small jar of currant jelly, a jar full of red wine and ? - 1/2 C sugar, depending on the tartness of the berries!. Cook the berries, wine and sugar at medium for 10 minutes or so!. Strain to remove the raspberry seeds and simmer the juice at medium for 20 minutes or so until it's gone all syrupy!. Whisk in the jelly and cool to room temp!. Spread some of this on top of the cake, leaving a small uncovered edge!. Now arrange all sorts of fresh berries on top of the glaze!.Www@FoodAQ@Com

You will be doing yourself a favor if you buy a cheesecake factory or Coleman cheesecake bakery cheesecake!. Cheesecakes are fickle to make, and require a lot of luck and prayer not to crack!.
