Tomatoes vary on acidity!. You must taste the sauce and determine for yourself if it needs added sugar or not!. Make the sauce how you like it and it will be great!. There is not a specific recipe for adding sugar due to the the difference in the acidic contents of the tomatoes you are using!. Hope this helps !!!Www@FoodAQ@Com
I ALWAYS put sugar with tomato sauce because of the high acidity found naturally in tomatoes!. Don't be afraid it will make your dish too sweet!.!.!. the interaction with the acid mellows out the sweetness and is a nice addition!.

In my sauces and meatloaf (which I use crushed tomatoes, tomato paste and sauce) I use a hearty dash and that does the job!.

I really don't like sugar in my sauce!. I cook it with wine instead, which sweetens as it cooks!. I can't stand sauce in the jar because of the sugar, but that's me!. I don't like it too acidic either--I think the key is to use lots of tomatoes and NO tomato paste!. It's the concentrated stuff that's too acidic!. And if mine does turn out a little on the acidic side, I add just a little half and half!.Www@FoodAQ@Com
I usually put 1 tablespoon of sugar whenever I make homemade pasta sauce!. If the sauce is too tart, I add sugar to counteract the tart taste!. Sometimes I put more, sometimes less, then mix it all together, and taste the sauce if it needs more seasoning!.Www@FoodAQ@Com
