DOUBLE CHOCOLATE MUFFINS

2 c!. flour
3/4 c!. cocoa powder
1 c!. sugar
1 tbsp!. baking powder
1 lg!. egg
1 c!. milk
1/2 c!. "Shedd's Spread Country Crock"
1 1/2 c!. mini chocolate chips

In large bowl combine flour, sugar, cocoa and baking powder!. In medium bowl whisk egg, milk and melted spread!. Pour liquid ingredients into dry!. Add chocolate chips, stirring until mixed!. Spoon batter evenly into 12 greased 2 inch muffin pans!. Bake in preheated 400 degree oven for 20 minutes!. (Cupcake liners may be used in place of greasing pans!.)

CHOCOLATE CHIP MUFFINS

1 1/2 c!. unsifted all-purpose flour
1/2 c!. sugar
2 tsp!. baking powder
1/2 tsp!. salt
1/2 c!. milk
1/4 c!. vegetable oil
1 egg, beaten
1/2 c!. semi-sweet chocolate mini chips
1/2 c!. chopped nuts
1/4 c!. chopped maraschino cherries, well drained
2 tsp!. grated orange peel

Combine flour, sugar, baking powder and salt in medium bowl!. Add milk, oil and egg; stir just until blended!. Stir in mini chips, nuts, cherries and orange peel!.
Fill greased or paper lined muffin cups 2/3 full of batter!. Bake at 400 degrees for 25 to 30 minutes or until golden brown!. Remove from pan; cool completely!.
