The reason for using very ripe bananas is that they blend into the batter and your cake will bake evenly!.
The under ripe bananas are hard and when mixed into a cake batter, will settle to the bottom of your cake while baking in the oven making your cake or muffins too moist at the bottom and bottom heavy!.Www@FoodAQ@Com

the riper the banana, the softer it becomes, making it easier and better for mashing!. Ripe bananas also have a sweeter flavor as greener bananas can have a slight bitterness to them!. The recipe will most definitely be tastier and more truly " banana flavored " if you use riper bananas!.!.!.!.Www@FoodAQ@Com
Make sure you leave the bananas out of the fridge like on a counter!. They will ripen really fast! Better to use ripened bananas!. They are very inexpensive at the grocery store cause they are trying to push them out the door, before they are no longer sell-able!.Www@FoodAQ@Com
The riper bananas will be softer and sweeter for both texture and flavor!. Your muffins may not be as sweet and they may be a little drier!.Www@FoodAQ@Com
If they are too ripe it tastes awful!.If it is underripe it is bitter!.I prefer bananas with black spots!.Yum! Good luck with your cake!Www@FoodAQ@Com
