Here's my recipe for traditional Spanish omellete, learned when I lived in Spain!.!.!.!.totally different to what my mum used to call Spanish omelette!. A true tortilla Espanola has only eggs, potatoes, onions, garlic, and seaoning!.!.!.no extra colourful bits in it!. I never follow recipes and I use my eye to measure so I'm not much good at the quantities but here it is:

The vital key is to have a dedicated egg pan!. Never use a frying pan that has been used to cook meat or fish!. Trust me -otherwise your omelette will stick!. No joke!

INGREDIENTS
(quantities vary with the size of the pan you use!. Experiment!.!)
*1 large onion, chopped
*2-3 cloves of garlic, finely sliced or chopped (discard the stem from the middle to reduce garlicky breath - another good Spanish trick!.)
*4-6 medium sized potatoes, thinly sliced (though I often dice instead)
*olive oil
*salt and pepper
*4-8 eggs depending on the size of the pan and the quanitity of potato!. A small egg pan needs only 4 eggs and 4 potatoes for example!.

Seaon the potatoes fairly heavily with salt and pepper!. Potatoes need a lot of salt, so low sodium is a healthier option!.
Heat enough oil to gently fry the potatoes until they are golden and beginning to soften!. With practice try this to get a really nice texture: very gently break them up just a little as they cook by using the edge of a spatula or egg flip/fish slice!.
About half-way through the cooking add the chopped onion and garlic!.
Meanwhile, beat the eggs in a large bowl and generously season with salt and pepper!.
When the potatos, onion and garlic are softened and golden remove from the heat!. Do not add the eggs to the mixture in the pan or the oil will accumulate around the sides and the mix will not turn out right!. The trick is to add the contents of the pan, oil and all, into the bowl and to mix everything thoroughly and evenly!.
Return the pan to the heat and gently add in the mixture!. Lower the heat to medium!.
During cooking use the spatula/egg flip/fish slice to cirlcle around the sides of the pan to help form a nice solid edge to the omelette, and give it a nice round shape!.
Gently shake the pan to help prevent sticking but if you have never cooked meat in the pan and have added the potato mixture to the eggs as described, sticking should not be a problem!.
Ease the egg flip under the omelette to check if the bottom is cooked!. When it is golden brown you can turn the omelette over!. In Spain they flip it in the air but it is far safer to use a flat plate to turn it! It should only take about 4 minutes to cook the bottom!.
Turn the omelette out onto the plate and serve with garlic mayo if you dont have ali oli!.!.!.or any hot sauce you prefer!. yummmmm!. Very nice with a fresh green salad!.Www@FoodAQ@Com

Boiled is healthier, I imagine since you can easily pop out the yolk (where most of the cholesterol is)!. also, scrambling entails butter, whereas water is calorie free!.

Here's my 'homemade' Ouevos Rancheros (sorry for butchering spelling)!. Not very fancy, but easy peasy!. I came up with it while imitating a restaurant's dish I found while vacationing in Dovery NH

Scramble your egg/s with a bit of milk to keep them fluffy!. Add cumin and/ or chili powder as you scramble (just a light sprinkle of each for 3 eggs)!. Make a flat omelette, and as the egg solidifies, spoon a small amount of your favorite salsa down the center!. Then, layer some mexican shredded cheese, or sharp cheddar, or jalapeno, or whatever cheese you prefer!. Fold edges over!. Remove from pan once cooked to your liking!.

Finally, garnish with a bit of sour creme, snipped cilantro, and chopped black olives!.

Omelletes can be healthy too!.One thing going against the omellete is the frying bit!. If oil is a concern use a non stick pan and heart friendly oils like Olive, Sunflower or Canola ( just a few drops )!.
What decides an Omellete healthy quotient is what you put into it!. An omellete needn't be loaded with cheese and diced sausages!. There are so many healthy alternatives, You could add chopped onions, spring onions, bell peppers, mushrooms, tomatoes, green coriander, green chillies, finely chopped spinach leaves etc to an omellete, and voila it will be nutritious!.

My recipe for a Spanish omellete!.
Lightly saute chopped onions and green chillies in a few drops of oil, until onions turn translucent ( I cover the pan so less oil is used and the moisture cooks the onion )!. Next I add chopped tomatoes and salt, and cook till the tomatoes are nicely done!. I then add an assortment of veggies ( capsicums, spinach, mushrooms etc and cook till they are a little tender!. Add green coriander!.
I blend 2 eggs in a blender along with 2 tbsps milk and a pinch of salt till it is nice and frothy!.
For the final preparation I spread the prepared veg mix evenly on a non stick pan and gently pour the egg mix over it!. Cover the pan and cook for about 4 mins!.
Check to see if the egg is cooked and serve!.
You can spread very finely sliced potatoes on the non stick before spreading the veggies!. ( I pour a mixture of sugar dissolved in vinegar along with a pinch of turmeric on the potatoes to give it a unique flavour )!. Let them cook on one side for about 2- 3 mins, turn each slice and spread the veggies on top!.
If you are adding cheese you should grate it on top of the veggies before the egg goes in!.
Sausages or any other shredded meat can go in along with the veggies!.Www@FoodAQ@Com

Recipe for spanish omelette:
4 medium-sized potatoes - peeled and thinly sliced
6 eggs

1 green pepper - chopped
1/4 litre olive oil

Heat the oil in a large frying pan and then gently fry the sliced potatoes until almost soft, stirring from time to time so that they don't burn on the bottom of the pan!. Add the onion and the green pepper and continue frying until all the vegetables are soft!. Drain the vegetables in a colander to get rid of the excess oil!.

Beat the eggs in a bowl and season with salt and pepper!. Add the potatoes, etc!. and mix well and check seasoning!.

Heat a little oil in a frying pan on a moderate heat!. Pour in the potatoes and eggs and shake the frying pan from time to time so that the omelette doesn't stick to the bottom!. Once the bottom of the omelette has set, turn the heat down low and cover the pan!.

After about ten minutes, turn the omelette by placing either a flat plate or saucepan lid on the frying pan and quickly turning over!. Gently slide the omelette back into the frying pan and continue frying, once again shaking the pan from time to time so that it doesn't stick to the bottom, until it has set all the way through!.

Boiled egg is more healthy!. Though I dont take egg/omelet, still I would suggest the following good procedure for making omelet!. Take a frying pan, boil the water and pour the egg after breaking!.
