Question: Need casserole/dinner ideas!!!?
does anyone have any idea of what to fix for 8 adults and 4 kids!? i am just looking for the main dish!. it CANNOT have mushrooms, tomatoes, peppers, or rice (allergy reasons) thanks for your time!!Www@FoodAQ@Com

Think outside the box:

I was going to say the regular "Spaghetti and Meatballs", but no tomatoes means no tomato sauce!.!.!.!.!.!.!.

So, let's rethink this for an easy dinner idea: Fettucine Alfredo with meatballs (Yes, they do go together, and if someone doesn't like meatballs, they dont' have to eat them) It's cheap (if you use jarred Alfredo Sauce) and fettucine is cheap as well!.!.!.!.!.along with a couple bags of salad and garlic bread, you're probably looking at under $20 to feed 12 people!.!.!.!.!.!.!.That's pretty economical!.!.!.!.!.!.(use the frozen meatballs from the grocery!.!.!.!.!.!.I just simmer them in some beef broth to defrost them and then add them when hot to the fettucine with Alfredo sauce!.!.!.!.!.!.!.


Or, you could do that Ground Beef and Hashbrown casserole topped with cheese and crushed crackers!.!.!.!.!.!.That's a good standby for a lot of people!.!.!.!.!.!.!.

Ultimate Hashbrown CasseroleMakes: 8 servings: Double this to make enough for 12!.!.!.!.!.!.!.!.!.!.!.!.!.!.


Ingredients:
10!.25 oz!. can condensed cream of chicken soup
8 oz!. Kraft Colby cheese, grated
1/2 cup melted butter OR margarine
1 sm!. onion, minced
1 tsp!. salt
1/2 tsp!. black pepper
2 lb!. bag frozen shredded hash browns
Preparation - Spray a 13" X 9" X 2" baking pan with non-stick cooking spray; set aside!.
- In a bowl, combine soup, cheese, butter, onion, salt, and pepper!.
- Gently fold the potatoes into the mixture and pour into prepared pan!.
- Bake in a 350 degree oven for 35-40 minutes, until heated through and top is browned!.Notes This is the ultimate comfort food! Great for potlucks and make ahead side dishes!.

Chicken and Broccoli Cheese Casserole:

1 pkg!. (16 oz!.) frozen broccoli florets, thawed 1 lb!. boneless skinless chicken breasts, cooked, cubed 1/2 lb!. (8 oz!.) VELVEETA Pasteurized Prepared Cheese Product, cut up 1/4 cup (1/2 stick) butter or margarine, divided 1 cup coarsely crushed RITZ Crackers (about 20 crackers) ARRANGE broccoli in single layer in lightly greased 2-quart oblong baking dish; top with chicken and VELVEETA!.

MELT butter; toss with cracker crumbs!. Sprinkle evenly over casserole!.

BAKE at 350°F for 25 to 30 minutes or until hot and bubbly!. Serve warm

16 ounces macaroni, about 3 1/2 cups
2 can (10 1/2 ounces) cream of chicken soup or cream of chicken soup with herbs
2 cup milk
4 to 5 cups diced cooked chicken
2 jars, 4 ounce size diced pimientos, drained
4 cups frozen peas and carrots, cooked just until tender
1 teaspoon salt, or to taste
1/4 teaspoon black pepper
16 ounces shredded sharp Cheddar cheese, or mild
2 cup French-fried onion rings
PREPARATION:
Lightly grease a 9x13 casserole dish!. Heat oven to 350°!.
Cook macaroni following package directions; drain and rinse with hot water!.

In a large bowl, mix the soup with milk; stir in the diced chicken, pimientos, peas and carrots, salt and pepper, and cheese!.
Stir in the cooked drained macaroni until well blended!. Spoon the macaroni mixture into the prepared baking dish!. Sprinkle onion rings over the top!. Bake for 30 minutes, or until hot and bubbly!.

Shells and Cheese with Chicken
This chicken casserole recipe is easy to make any night of the week!. Chicken and vegetables help turn this delicious shells and cheese into a hearty meal for 6!.

1 tablespoon butter
4 green onions, thinly sliced
1 1/2 to 2 cups diced cooked chicken
1 to 1 1/2 cups frozen mixed vegetables or peas and carrots, thawed
1/4 teaspoon fresh ground black pepper
1 package (6 ounces) Annie's Shells & Cheese, prepared
1 can (10 3/4 ounces) Southwest Pepper Jack Soup
1/2 to 1 cup finely shredded Mexican blend cheese or Monterey Jack
1/2 cup fresh bread crumbs









Heat oven to 350°!. Lightly grease a 9-inch square baking dish or spray with nonstick cooking spray!.
In a large saucepan, heat butter over medium low heat; add green onions and chicken!. Sauté the onions and chicken in the saucepan, stirring constantly, for about 2 minutes!. Add vegetables, pepper, prepared shells and cheese, soup, and cheese!. Stir and heat through!. Transfer to the prepared baking dish!. Bake for 25 minutes, or until browned and bubbly!.

Mince & Vegetable Casserole!.

500gm Minced Beef!. (pork etc)
2 Medium onions, chopped
2 Cloves Garlic, crushed (optional)
2 Medium carrots, chopped
2C Peas!.
2C Corn!.
Tomato sauce or paste
Worcestershire sauce!.
Salt & Pepper!.
Fry off the mince onions and garlic!.
Transfer to a casserole dish!.
Add veggies, sauces and seasonings and combine!.
Pour in some stock, or water and stock cubes!.
Cook in a 165C oven for 30 - 45 minutes!.

Chicken Stroganoff

12 ounces broad egg noodles
1 tablespoon butter
1/2 cup chopped onion
1 teaspoon dried thyme
3 cooked chicken breast halves, cut into 1-inch pieces (about 3 cups)
1/2 cup dry red wine
1 cup reduced-sodium chicken broth
1 1/2 tablespoons cornstarch
2 teaspoons Worcestershire sauce
Salt and freshly ground black pepper
2 tablespoons freshly chopped chives


Cook egg noodles according to package directions!.
Meanwhile, melt butter in a large skillet over medium-high heat!. Add onion and cook 3 minutes until soft!. Add thyme and cook 1 minute, until fragrant!.
Stir in chicken!. Add wine and simmer 1 minute!.
In a small bowl, whisk together broth, cornstarch and Worcestershire sauce!. Add mixture to pan and bring to a simmer!. Simmer 2 minutes, until mixture thickens!. Stir in cooked noodles and toss to combine!. Season to taste with salt and black pepper!.

CHICKEN CASSEROLE
1 (6 oz) pkg!. noodles, cooked
1 can cream of chicken soup
1/3 c!. evaporated milk
1-1/2 c!. grated cheddar cheese
2 c!. diced, cooked chicken
1 c!. celery,diced fine
1/2 c!. chopped pimento
1 c!. toasted sliced almonds
Combine all ingredients together gently!. Bake at 400 for 30 min!.!.!.!.!.!.serves 8

LENTIL SAUSAGE CASSEROLE
1 (1 lb) pkg lentils
2 carrots, chopped
1 medium onion, chopped
2 cloves garlic,minced
1 lb!. Italian sausage
3 TB!. olive oil
sweet basil
Soak lentils in water to cover overnight!. In large pot, combine lentils, carrots & onions!. Brown sausage & garlic in 1 TB!. olive oil!. Cut sausage in 1/4" slices and add to lentils!. Season with basil, salt & pepper to taste!. Add water to cover 1 inch!. Simmer covered for 1-1/2 to 2 hours, or until lentils are tender!.
