I love to "steam" veggies like broccoli, asparagus, or green beans in a covered skillet, no special skills needed!.
Pick only fresh veggies!. Green beans need to be the skinny kind!.
Rinse under cold water and cut into bite size portions!.
Put in skillet with about 3 tablespoons water!. Cover and cook on medium heat until color looks as pretty as a picture!. (Really!.)
Add butter and a little salt!. Cover, shake a little to distribute well, then leave uncovered so veggies will not over-cook!. Serve immediately or leave on stove without cover until ready to serve!.Www@FoodAQ@Com

Ingredients:
250 gms Cottage Cheese (Paneer)
3 Capsicum (Shimla Mirch)
4 Onion (Pyaj)
4 Tomato (Tamatar)
1 " long piece Ginger (Adrak)
1 tsp Red Chili Powder (Lal Mirchi)
2 Bay Leaf (Tej Patta)
4 Cloves (Lavang)
1 piece Cinnamon (Tuj/Dalchini)
Little Orange Color
4 tblsp Clarified Butter (Ghee)
How to make kadhai paneer:
Cut cottage cheese, capsicum in long pieces!.
Grind onion, tomato, ginger, salt, red chili powder and orange color!.
Mince cloves and cinnamom!.
Heat clarified butter in a pan!.
Add bay leaf, cloves, cinnamon!.
Then add onion, tomato, ginger paste!.
Continue cooking it on medium flame till ghee/oil begins to separate!.
Add paneer and capsicum pieces!.
Cook on low flame!.
When the capsicum are done put off the flame!.
Take off the fire and serve hot!.

I loooooove raw veggie "pizza"
1!. Make your own dough or take a can of croissants & spread them out on a round (or even square) cookie sheet or baking stone!. Cook til done!.
2!. Mix together a package of softened cream cheese, a little bit of sour cream & a packet of that powdered ranch dip!.!.!.preferably Hidden Valley!. (Not sure if it's the whole packet or just half, can be done to taste I guess!.)
3!. Chop up various raw veggies such as ones you'd find in a veggie tray (carrots, celery, cucumbers, broccoli, etc)
4!. Spread cream cheese mixture onto the cooked (& cooled) dough/croissant crust, sprinkle with chopped veggies then top with a sprinkling of shredded cheese of your choice!.
5!. Cut up into squares, triangles (like w/ a regular pizza) or however you'd like!.

10 med zucchini
2 med onion
1/4 lb butter - the real thing :)
wash zucchini, cut ends off and cut into thin slices
chop onions
On medium heat melt butter in frying pan
Add onion then zucchini
Stir occasionally and cook until veggies are tender - approx!. 15 - 20 minutes!.
