Answers:
roasted garlic potatoes, just toss peeled quartered potatoes in oil in a bowl with some fresh chopped garlic, parsley, salt and pepper with some sliced onion!. If you can get it also serve with a side of broccoli rabe sauted in garlic an oil s& p and some chicken broth!.!. Sounds like a great dinner, what time!? Happy Mothers Day! Oh just put the potatoes in the same pan the last 1 hour of cooking your roast!. You are like me, I love the garlic!.Www@FoodAQ@Com

For a starch: Garlic mashed potatoes, oven roasted potatoes, baked sweet potatoes, carbonara pasta, long grain/wild rice, saffron rice (as the user above suggested), roasted corn on the cob, whole wheat rolls!.
Fruits: Mango, melonball variety, baked apples, poached pears, baked bananas, applesauce, cranberries!.
Veggies: Creamed carrots, baby peas and pearl onions, steamed broccoli (with a bit of garlic in the steamer basket), asparagus sauteed in a bit of olive oil until tender crisp, roasted peppers, an italian style tomatoe casserole, hearty mixed green salad!.
Dessert: Peach cobbler, Dutch apple pie, thin slivers of pound cake with baked fruit atop!.Www@FoodAQ@Com

I would suggest a nice saffron rice!. The rice has a nice flavor that would accentuate the rosemary nicely!.

Another option would be to throw some chopped carrots and potatoes in with the roast during the last half hour to forty minutes of cooking!.Www@FoodAQ@Com
