How do you make an enchilada casserole???!
do you slap a layer of tortillas in a pot/pan~then fill it w/whatevers, and top layer w/tortillas!?

Ingredients
1 lb Squash,i!.e!. crook-neck, zucchini, butternut, etc!., cut into chunks
1 Md onion, chopped
2 cloves Garlic, minced
2 tbs!. Olive oil
1 can( 10oz) enchilada sauce
1 c!. Shredded low-fat cheddar cheese
1 pkg!. (5oz) corn chips, crushed
1 pkg!. (10oz) frozed kernal corn
Salt, pepper, pepper hot sauce, etc, to taste
Preparation
Place squash, onion, garlic, and olive oil in a pot, cover and cook on low heat until the squash is cooked and mushy!. process the mixture in a food processor until smooth, scoop into a large bowl, add the enchilada sauce, cheese, corn, and chips!. Mix well!. Add salt, pepper, hot pepper sauce if desired!. Spray a baking pan with vegetabel cooking spray, spoon the mixture into the baking pan and bake in a pre-heated 350degree oven for 30 min!. Serve with green salad!.
Note: an aditional 1/2 cup shredded cheese may be sprinkled on top of the casserole before baking!.

1 yellow bell pepper, seeded and also chopped
1 lb!. boneless, skinless chicken breast, cubed
1 can kidney beans, washed and drained
1 package frozen corn kernels
1/2 bunch fresh cilantro, chopped
1 tbsp ground cumin
2 cups shredded cheese (pepper jack)
1 medium onion, chopped

Pre-heat your oven to 350 degrees!. Heat the oil on medium and add the cubed chicken breasts!. Add a pinch of cayenne pepper, cumin and taco (or Mexican) seasoning!. Stir and add the garlic and onion!. Cook until the chicken is colored brown, which takes about 5 minutes!. Now include the yellow, orange, and red peppers and mix for five more minutes!. Then add the kidney and black beans as well as the corn!. Fill a 9x13 inch baking dish with corn tortillas!. Then pour the skillet mixture on top of the corn tortillas and add pepper jack cheese and cilantro on top!. 2 cups reduced-fat shredded Mexican cheeses, Monterrey jack or cheddar cheese
2 green onions, washed and chopped
Reduced-fat sour cream, for garnish
Diced fresh tomato, for garnish
Heat oven to 350 degrees!. Spray a large baking dish with nonstick
cooking spray!. Spread each tortilla with some of the softened cream
cheese!. Combine the shredded chicken, cream of chicken soup and one
container of the salsa verde in a bowl!. Place half of the tortillas spread with cream cheese in the bottom of the baking dish, top with half of the chicken mixture and half of the
cheese!. Top with the remaining tortillas and chicken mixture!. Pour remaining two containers of salsa verde over the top, sprinkle with the remaining cheese and sprinkle with the green onions!. 1 small can diced green chiles
Black olives
1 large can enchilada sauce

Preheat oven to 325 degrees F!. Grease a 10 x 8-inch baking dish!.
Put 4 to 6 tortilla shells in the bottom of the dish!. Brown the meat, cilantro and onion together!. Stir in the corn, diced green chiles and olives!. Put a layer of meat mixture on the tortillas!. Pour some of the enchilada sauce over the meat!. Sprinkle some cheese over all!. Lay down some more tortillas and repeat, ending with cheese!. Bake uncovered for 35 minutes!.

onion; reduce heat and saute 5 minutes!. Drain excess fat!. Place 2
cups crushed corn chips in bottom of greased 1 1/2quart dish!. Layer
ground beef over chips!. Pour enchilada sauce over beef!. Top with
cheese!. Bake 20 to 30 minutes or until bubbly and heated through!.
Sprinkle remaining corn chips over top of casserole!. Bake an
additional 5 minutes!. Top individual servings with sour cream, if
desired!.
