Cilantro is a pretty potent herbfor your type of menu!. I'd save it for something Mexican or Asian!. Here's one that I found:

1 4oz!. can chopped green chilis
1/4 c chopped fresh cilantro
1/4 c water
1/4 c fresh lime juice
1-2 cloves garlic
2 t honey
freshly ground pepper to taste
|Place all of the ingredients in a food processor or blender!. Blend until
smooth!. (one of those Braun hand blenders works really well-ac)

An easy glaze for carrots is about 2-3 tbsp butter and the same amount of brown sugar!. I like to steam my carrots first, to tender!. then in a pan melt butter and sugar, then add tender carrots, and just sautee them in pan until fully tender!. As far as dressing!. One part oil to 3 parts vinegar!. ( you choose how much you need!.) then take about 3 TBSP chopped cilantro salt, pepper, and then taste it!. You can also add one clove of garlic chopped fine for taste!. I like Olive oil and lime juice for a cilantro dressing!. ( the measuring is easier than you think)!. IWww@FoodAQ@Com
