What's the secret to getting banana bread moist?!
I love banana bread, but I can never get the middle done all the way, before the edges get too hard!. I usually make muffins instead because I've gotten so frustrated!.
I'd like to make it in a loaf pan and have the center done and the edges not brick hard!.!.anybody have any tips!?Www@FoodAQ@Com

I would recommend cooking it at a lower temperature for a longer period of time to prevent that hardening on the crust that you don't like, or build a tinfoil tent and cover the loaf pan, sealing it on all sides, then take the tinfoil off half way through the baking time, that should cook the inside before over crusting the outside!. I never use less than four bannanas, and they are very ripe when I use them for bread and my bread always comes out like Bob Evans!.
Try just increasing the number of bananas in your current recipe and see if that does the trick for you!. (if your recipe calls for one or two bannas try adding four to six)
and also add to all recipes below: A PACK OF INSTANT BANANA FLAVORED PUDDING MIX
and here is a recipe to try
1 cup sugar
1/4 cup butter, softened
2 eggs
4 1/2 cups very ripe mashed bananas
1/3 cup strawberry jam
1 2/3 cups all-purpose flour
1 t baking soda
1/2 t salt
1/4 t baking powder
1/2 cup chopped walnuts
Heat over to 350 degrees!. Grease a loaf pan!. Mix sugar and butter in a medium bowl!. Stir in eggs until blended!. Add bananas and water, mix for 30 seconds!. Stir in remaining ingredients just until moistened!. Pour into pan, bake about 1 hour or until a toothpick inserted into the center comes out clean

1 1/2 tablespoons butter, melted
1/3 cup white sugar
1/3 cup peanut butter
1 egg, lightly beaten
4 ripe banana, mashed
1 1/2 tablespoons milk
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 dash salt
1/2 cup raisins
1/4 cup chopped roasted peanuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Grease a 5x9 inch loaf pan!.
In a large bowl, cream together the butter, sugar, peanut butter, egg, banana, and milk!. In a separate bowl, mix the flour, baking powder, baking soda, and salt!. Stir the flour mixture into the butter mixture just until moistened!. Fold in the raisins and peanuts!. Transfer to the prepared pan!.
Bake 45 minutes in the preheated oven, or until a knife inserted in the center of the loaf comes out clean!. Cool in pan for 10 minutes before servingWww@FoodAQ@Com

We love banana bread too!. I make it often, and have done so for over 30yrs!. My mother's award winning recipe was published in a cookbook in the 70's!. To this day, I've never tasted a recipe that compares!.
The edges should be hard and on the dark side, not burned - it's a bread and that's the outer crust!. *makes wonderful 'toast'
I wouldn't alter the temperature or cooking time when making the bread, but you might want to check your thermostat and make sure your temperatures are precise!.
Most importantly, let those bananas ripen nicely with those beautiful brown 'freckles'!. Bright yellow, recently purchased bananas won't deliver the taste the bread deserves!.Www@FoodAQ@Com

It's been a while since I made it, but you must
use at least 4-6 eggs, 2 cups of milk and blend in
some clarified butter or cream, 1/4 cup!. also, don't
overload it with nuts as they absorb moisture!.
Easy on the flour, the consistency of the cake should
be like a good meatloaf mix!. Not soupy, but MOIST!.
OIL THE PAN FULLY WITH OLIVE OIL!.!.!.It will not burn
like butter!. And remember, the more things you add,
like raisins or nuts etc!. will mean than you need more
liquid to compensate!.

I agree with the lower temperature/longer period of time!. also, try adding a bit of soy milk (or regular milk, if you don't have soy !.!.!. just substitute milk for 1/2 of the water the recipe calls for!. E!.g!. if recipe is 1 c water, use 1/2 c water and 1/2 c milk)!.Www@FoodAQ@Com
use an extra banana in your recipe for added moistness, bake at 25 degrees lower than the recipe calls for so you can cook it a little longer to get the middle done, without the outside charring up!.Www@FoodAQ@Com
