Russian Beet and Potato Salad
1/2 c Egg, hardboiled & chopped
1 c Potato, cooked & diced
1 c Beets, cooked & diced
1 c Green peas, cooked
1/4 c Carrots, shredded
3/4 c Yogurt, plain
1/2 ts Salt
1/2 ts Black pepper
1/2 ts Cider vinegar
6 Scallions chopped
Mix all ingredients together in a large bowl!. Cover, refrigerate to chill,
and serve on a bed of lettuce or cabbage leaves!.

1 pk (3-oz) lime jello
3/4 c Boiling water
1 pk (3-oz) cream cheese
14 lg Marshmallows
1/4 c Milk
1 cn (small) crushed pineapple
1/4 c Mayonnaise
2 Bananas; diced
1 c Pecans
1 ts Lemon juice
Mix jello, water, cheese & marshmallows over low heat!. Remove from heat &
add remaining ingredients!. Pour into large bowl & refrigerate!. Serve when

Peel the potato cut into small pieces and boil in salted water for approx 10 mins or until soft - drain and leave to cool
Hard boil the eggs then remove the shells and leave in cold water to cool
Once cooled, chop the egg and potato into small cubes place in a bowl and add the tuna
Chop a few green olives and add to the bowl (optional)
Mix all the above ingredients season with a little salt and pepper
Finally add 2 - 3 tbsp mayonnaise and stir into the mixture
Garnish with whole green olives and a sprinkle of sweet paprika!.
Experiment with additional ingredients such as cooked peas or carrots!. Try adding a little finely chopped onion or red pepper!.

Russian Salad: made with potatoes, turnips, carrots, ham, green beans and peas and tossed with mayonnaise!.
INGREDIENTS:
1/2 cup cold cooked carrots, diced
1/2 cup cold cooked turnips, diced
1/2 cup cold cooked potatoes, diced
1/2 cup cold cooked green beans, cut into 1-inch pieces
1/3 cup cold cooked peas
1/4 cup mayonnaise
salt and freshly ground black pepper
1/3 cup julienned ham strips
1/3 cup julienned chicken strips (or pickled tongue, if you can find it and like it)
2 hard boiled eggs, sliced
4 rolled anchovy fillets
PREPARATION:
1!. Toss the carrots, potatoes, turnips, green beans, and peas together in a bowl!.
2!. Mix in the mayonnaise and season with salt and pepper AND SERVE

150 g piece of cold roast beef
1 gherkin, Russian-type
3 cooked potatoes
2 cooked carrots
1 apple
120 g canned, drained peas
sauce:
75 ml smetana
25 - 50 ml mayonnaise

Combine the ingredients for the sauce!. Cut the vegetables, meat and apple into small cubes or thick strips!. Gently mix in the peas and the sauce, season with pepper!. Add more smetana or mayonnaise if necessary!.
Cover the salad and let stand in refrigerator for a couple of hours!. Serve the salad spooned on a bed of lettuce, garnish with wedges of tomato and hard-boiled eggs, dill sprigs etc!.

i usually grab pre-made potato salad from my local grocery store, and just add stuff to it, like meats (i like bologna), eggs, pickles, sweet peas, apple, and whatever else you think might go well with it!. there's usually enough mayo already so you don't need to add more!.
