Im looking for cheap, healthy lunch ideas... Help?!
So, I make lunch for my boyfriend and I to take to work daily!.
He does not have a microwave at work, so that makes it harder!.
We normally have rolls with salad and some form of cold meat, but this gets boring!.
Neither of us eat fish so tuna is out of question!.

Try the Bento style- there are tons of recipes as bento becomes so popular, and you don't need any special cutesy box- just a sectioned tupperware will do!. This site has tons of recipes:

Tuna melts are actually healthy and tasty!. the way I make them : (2 sandwiches)
4 slices arnold 15 grain
1 can drained / dry pack tuna
1/4 pound sharp cheddar
1/8 pound monteray/jack
1 tbsp mustard (wet) (I like spicy)
1 TSP Mayo (It's worth it, don't use mirical whip)
Mix Tuna, mustard, and mayo, no relish, that's just silly!. When everything seem too darn mushy, spread on bread, and toast (in microwave) untill things start to pop!. (in my 1600 W microwave it's about 1!.5 min)
after things start to pop, wait about 10 seconds!. then stop the internal turn table!.!.!. lay on the "spice" (cheese) whichever you like the most!.!.!.!. Once the cheese is melted, you're almost safe to dig in, but be careful!.!.!. every microwave is different, as is every fish and woman!.!. Never go in un prepared!.
Personally, I like to dip tuna melts in 1000 Island dressing, healthy, hell no but I'm still at 160 lbs so i don't complain!. :D

Curried eggs
Omelette or quiche, both can be eaten cold, maybe with bruchettas on the side!.
Different salads (eg!. Pasta salad, chicken salad, ham and cheese)
Different foccacias or ciabattas (eg!. 1!. Turkey, cheese and avocado with cranberry sauce, 2!. Cheese, ham and sun dried tomato, 3!. roast beef with mango salsa)

I have the same problem but we have a toaster oven and microwave!.
So your stuck with the salad and cold meat!. But try making salad!. Coleslaw sandwiches aren't bad and even if you dont like fish make a seafood extender salad (prawns Optional) with lettace this is almost a prawn cocktail in a roll!.
Last thing vary the rolls you use, go for a double cut and with the made salad rolls or sandwich send in different packages for you or him to put together later!.

Cook ahead recipe
Cherry tomatoes
Salad Leaves (your choice of salad)
Parsley (optional)
Pasta
2 Chicken breasts
1 carrot
1 cucumber
1 onion (optional)
Salt and Pepper to taste
Olive oil
Mix chicken in salt and pepper!.
Heat oil in a pan!. Once heated add the chicken!. Cook chicken on both side till well cooked!.
Take out of the pan and cut chicken into bite size pieces!.
Next cut cherry tomatoes into half, cut carrot and cucumber into small discs, then the salad and parsley!. Last the onions!.
Boil the pasta!. Once boiled wash with cold water to cool it!.
In a pot heat a tsp of olive oil!. Once heated add the onions and carrots after a minute add cucumber and chicken!. Once all the veges are heated a little off the gas!. Now mix the rest of ur veges and give it a good mix!. Then add pasta into the salad with a tsp of olive oil, salt and pepper!. Last mix well and keep in the fridge!.!.
Sounds Tough but its quite easy try it out!.!.

Do you have an El Pollo Loco nearby!? The regular menu is fairly reasonable plus they have a dollar menu!. If you want to actually make lunch and they don't have a microwave, your sort of limited to mostly cold cuts!. You could do a wrap or lettuce wrap!. Use chicken if you want it healthier!.Www@FoodAQ@Com
Try wraps!. I love wrap breads!. They go good with anything!. Salad, chicken, spreads etc!.
