For the main entree do a chicken ceaser salad

4 boneless, skinless chicken breast halves
1/2 cup creamy Caesar salad dressing
10 oz!. pkg!. romaine lettuce hearts
additional creamy Caesar salad dressing
1 cup garlic croutons
1/2 cup grated Parmesan cheese
PREPARATION:
Marinate chicken breasts in 1/2 cup salad dressing in the refrigerator for at least 2 hours but not longer than 8 hours!. Grill 4-5" from medium hot goals, turning once, until chicken is thorougly cooked!.Remove from heat and slice into strips!.
Combine lettuce, additional salad dressing, croutons and Parmesan cheese!. Divide among four plates and top with grilled chicken!. Serve immediately!. Serves 4

Starter - a few Italian antipasta's to share and get interactive - olives, sliced meats, marinated motzarella etc and it doesn't matter if theres something she doesnt like!
Main Course - Stuffed chicken breast wrapped in palma ham with some sauteed french beans and roasted new potatoes!.

Dessert - it's got to be chocolate and special - chocolate and tia maria mousse (again on cookeryclub and easy) or
chocolate brownies with vanilla ice-cream and choc fudge sauce with some fresh strawberrys or raspberrys!.

How about Chicken Parmigiana!?

Ingredients:
2 skinless, boneless chicken breast halves
2 oz!. dried bread crumbs
1 egg, beaten
3/4 (16oz!.) jar spaghetti sauce
2 oz!. shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Directions:
Preheat oven to 350 degrees (Farenheit;180 degrees centigrade or Gas Mark 4)!. Dip chicken into egg beaters, then the bread crumbs!. Place chicken on a lightly greased cookie sheet and bake for 40 minutes!. Pour 1/2 of the spaghetti sauce into a 9x13 baking dish!. Add the chicken and pour on the remaining sauce!. Sprinkle mozzarella and Parmesan cheeses on top and bake in the oven for 20 minutes!.

Mousse is nice for desert, and really simple even to make:

Ingredients:
1!.5 oz!. white chocolate for baking, broken into pieces
1/2 cup heavy whipping cream, divided
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract


Instructions:
Microwave white baking chocolate and 1/3 of the cream in an uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; stir!. The bars may retain some of their shape!. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted; cool completely!.

Beat remaining cream, confectioners' sugar and vanilla extract in small mixing bowl until stiff peaks form (do not overbeat)!.

Fold melted baking bar mixture into whipped cream; refrigerate!. Spoon into serving bowl or individual dishes!.

Makes 2 servings!.
