Mushrooms question?!
when using mushrooms in a cold turkey salad, would I be best leaving them uncooked or shall I cook them!.The turkey is cold too,if that helps any!.Www@FoodAQ@Com
Answers:
I prefer raw mushrooms in salad, after all, all the other veg is raw too!Www@FoodAQ@Com
I think that would be a matter of preference!. Sauteed mushrooms have a much different texture than uncooked mushrooms!. The color is different and more pleasing when they're cooked, I think!. It depends on the other ingredients!. If you have a lot of raw chopped veggies, I'd go with uncooked mushrooms!. If it's mostly turkey with just a few other things, I'd cook the mushrooms!.
If you cook them, drain them well!. Cooked mushrooms release a lot of liquid and you don't want your salad to get all weepy!.Www@FoodAQ@Com

In a Green Salad I use raw mushrooms I slice!. If you are making enough cold turkey salad to last for a few days then you should parboil the mushrooms first!. They will get dark and weepy if you don't!. If you use canned mushrooms, just drain them well and use like that!.
To parboil them!.!.!.just boil the water, can add salt if you like, add the mushrooms and boil for just about 1-2 minutes!.!.!.drain and run under cold water to stop the cooking process!.Www@FoodAQ@Com

Depending on how much time you have, if you don't have much prep time leave them raw!. If you have a day I would cook them and then marinate them!. (a light oil and vinegar type dressing works well)!. You get a great flavor from the mushrooms and the marinade!.Www@FoodAQ@Com
Pickle them a bit with sugar, Kosher salt, black pepper, chili pepper sauce, garlic and cider vinegar!. Slice mushrooms and let them sit in this brine for 1 to 2 days!. Yum!Www@FoodAQ@Com
Disregard!.!.!.!. misread question!. Just woke up and thought you were asking if you can cook them raw in a turkey or do you have to precook them!. : D
My answer is I would sautee them!.Www@FoodAQ@Com

If the mushrooms are very very fresh then you can just use them raw after wiping them clean!. If they appear a few days old then they might taste better cooked!.Www@FoodAQ@Com
Personally I would cook them because they dont take long and they are gorgeous cooked just let them cool down after being cookedWww@FoodAQ@Com
Leave them uncooked, I think you will get a better flavor and consistency to compliment your salad!.Www@FoodAQ@Com
