Cranberry Orange Scones

4 cups plus 1/4 cup all-purpose flour
1/4 cup sugar, plus additional for sprinkling
2 tablespoons baking powder
2 teaspoons kosher salt
1 tablespoon grated orange zest
3/4 pound cold unsalted butter, diced
4 extra-large eggs, lightly beaten
1 cup cold heavy cream
1 cup dried cranberries
1 egg beaten with 2 tablespoons water or milk, for egg wash
1/2 cup confectioners' sugar, plus 2 tablespoons
4 teaspoons freshly squeezed orange juice

Preheat the oven to 400 degrees F!.

In the bowl of an electric mixer fitted with a paddle attachment, mix 4 cups of flour, 1/4 cup sugar, the baking powder, salt and orange zest!. Add the cold butter and mix at the lowest speed until the butter is the size of peas!. Combine the eggs and heavy cream and, with the mixer on low speed, slowly pour into the flour and butter mixture!. Mix until just blended!. The dough will look lumpy! Combine the dried cranberries and 1/4 cup of flour, add to the dough, and mix on low speed until blended!.

Dump the dough onto a well-floured surface and knead it into a ball!. Flour your hands and a rolling pin and roll the dough 3/4-inch thick!. You should see small bits of butter in the dough!. Keep moving the dough on the floured board so it doesn't stick!. Flour a 3-inch round plain or fluted cutter and cut circles of dough!. Place the scones on a baking pan lined with parchment paper!. Collect the scraps neatly, roll them out, and cut more circles!.

Brush the tops of the scones with egg wash, sprinkle with sugar, and bake for 20 to 25 minutes, until the tops are browned and the insides are fully baked!. The scones will be firm to the touch!. Allow the scones to cool for 15 minutes and then whisk together the confectioners' sugar and orange juice, and drizzle over the scones!.Www@FoodAQ@Com

1 cup Butter, shortening or margarine
1 cup Milk
1/2 cup Raisins, currants or mixed dried fruit

Preparation

2!. Beat in milk, egg and fruit until well incorporated!.


3!. Turn out onto a lightly floured board and pat to 1/2-inch thickness!.


4!. Cut out with a floured cutter into 2-inch rounds (or, using a sharp knife, cut into triangles, which is the traditional Scottish method)!.

Vegetarian Quick Recipe


Ingredients
500g/1lb2oz self-raising flour
12g/?oz baking powder
a pinch salt
125g/4oz butter
125g/4oz caster sugar
250ml/8fl oz milk or water
150g/5oz sultanas

Method
1!. Sieve the flour, baking powder and salt into a bowl!.
2!. Rub in the butter until you have a sandy texture!. Make a well in the centre!.
3!. Dissolve the sugar in the liquid and add to the well in the mixture!.
4!. Gradually incorporate the flour with the sugary liquid and mix!.
5!. Roll out 2 rounds of the mixture 1cm/?in thick and place on a greased baking sheet!.
6!. Cut across halfway through the rounds with a large knife!.
7!. Milkwash and bake at 200C/400F/Gas 6 for 15-20 minutes!.



FRUIT SCONES

3 tbsp!. baking powder
3 oz!. butter
1/4 c!. plus 1 tbsp!. granulated sugar
5 oz!. raisins
1 1/4 c!. milk
1 egg, beaten with 1 tsp!. water (egg wash)

Sift flour and baking powder into large bowl!. Cut in butter!. Stir in sugar and raisins!. Stir in milk to make soft dough, being careful not to over-mix!. Using floured hands, pat dough until it is 1/2 inch thick on lightly floured surface!. Cut with 2 inch round cutter or into triangles with sharp knife!. Place scones on parchment or foil- lined baking sheets!. Brush lightly with egg wash!. Bake in preheated 425 degree oven until lightly browned, about 15 minutes!. Cool on wire racks!. Serve immediately!.

Note: For extra sheen and slight sweetness, brush scones as they come out of the oven with a mixture of 2 parts water to 1 part confectioners' sugar!.
