Amaretto Mousse

1 pint whipping cream
1 tbs!. gelatin powder
3 oz!. amaretto liqueur
4 eggs
3 tbs!. confectioners sugar
vanilla extract, to taste
almond extract, to taste
1 cup sliced, toasted almonds

Whip the heavy cream!. Place in refrigerator until ready to use!.

Dissolve gelatin powder in Amaretto in double boiler!. Keep warm until ready to use!.

Combine eggs and confectioners sugar in a separate double boiler!.

Heat on low, until warm whisk constantly!.

Remove egg & sugar mixture from heat!.

Mix at high speed until reaches firm peaks!.

Fold gelatin mixture into eggs!. Fold in whipped cream!.

Add vanilla and almond extract to taste!.

Fill dessert glasses, place in refrigerator until firm (approx 1 hour)!. Garnish with sliced, toasted almonds!.

This mousse is a very light dessert!.

Quick Amaretto Mousse

Ingredients

1 pk Instant chocolate pudding 1/2 c Low-calorie whipped topping
2 c Evaporated skim milk 1 c Fresh raspberries
1 tb Amaretto liqueur

Instructions for Quick Amaretto Mousse
Serving size: 1/2 cup Use artificially sweetened, nonfat, instant chocolate pudding mix!. Prepare the pudding according to package directions using the evaporated skim milk!. Add the Amaretto!. Let the pudding set for 10 minutes!. Fold in the whipped topping!. Alternate layers of raspberries and mousse in parfait glasses, ending with raspberries, and serve!.Www@FoodAQ@Com

Amaretto Mousse
8-10 servings

1 cup sugar
1/2 cup butter
4 eggs, separated
1/2 cup Half & Half
1/2 teaspoon vanilla extract
1 teaspoon almond extract
2 tablespoons Amaretto
1 tablespoon lemon juice
1 pint heavy cream
whipped cream, for garnish
slivered almonds, for garnish

Put the sugar, butter, egg yolks, and Half & Half in a heavy, 2-quart saucepan over medium heat!. Stir constantly until it comes to a slow rolling boil!. Let boil for 2 minutes, still stirring constantly!. Remove from the heat!. Strain into a bowl and put down into a larger bowl of ice!. Continue stirring until the mixture is cool!. Add the extracts, Amaretto, and lemon juice and mix well!. Whip the heavy cream, then fold it into the mixture!. Whip the egg whites until stiff (not dry), then fold them in!. Fill wine or champagne glasses with the mixture!. Cover with plastic wrap and chill until ready to serve!. When serving, put dabs of whipped cream on top and sprinkle with slivered almonds!.
