Bacon Wrapped Scallops with Spicy Mayo

1 1/2 pound large scallops
1/2 pound thin-sliced bacon
Extra-virgin olive oil
Sea salt and freshly ground black pepper
1 cup good quality mayonnaise
1/4 cup hot chili paste (recommended: Sriracha Hot Chili Paste)
1 lime, juiced
2 tablespoons chopped cilantro, plus more for garnish
2 heads Bibb lettuce, washed
3 avocados, sliced

Heat the broiler!. Wrap each scallop in a piece of bacon and secure it with a toothpick!. Place the bacon wrapped scallops onto a baking sheet, drizzle them with olive oil, and season them with salt and pepper!. Cook them under the broiler for about 10 to 15 minutes until the bacon is cooked through, turning once!.

Make the spicy mayo by combining the mayonnaise, chili paste, lime juice, and chopped cilantro!. Stir well and refrigerate until ready to use!.

Quick, Easy -N- Fast Sesame Chicken With Honey Dip Recipe

1 1/2 C!. mayonnaise
1 t!. dry mustard
1 T!. onion, minced
1 lb!. chicken breasts, skinless-boneless, poached and cut-crosswise into 1/2" strips
1/2 C!. seasoned bread crumbs
1/4 C!. sesame seeds
2 T!. honey
1 T!. dijon mustard

Preheat oven to 425°F degrees!. In a medium bowl, combine 1/2 cup of the mayonnaise, the dry mustard, and the onion; mix to blend well!. Add chicken and toss to coat!.

In a shallow bowl, toss bread crumbs and sesame seeds to mix!. Roll chicken strips in bread crumbs to coat!. Place in a single layer on a baking sheet and bake for 10 minutes, until lightly browned and crisped!.

Meanwhile, blend remaining 1 cup mayonnaise with honey and Dijon mustard!. Serve as a dipping sauce with the chicken strips!.

1!. Almond Mushroom Pate with Cream Cheese - serves 6

2 tbsp margarine
1 sm onion, chopped
1 clove garlic, minced
1 1/2 cup sliced mushrooms
1/2 tsp tarragon
1 cup blanched whole almonds
1 tbsp lemon juice
2 tsp soy sauce
1 ds white pepper
2 tbsp cream cheese, optional

Garnish: slivered or finely chopped almonds, fresh parsley sprigs, pimiento strips, or sweet red pepper strips, optional

In a large skillet, melt margarine!. Add onion, garlic, and mushrooms!. Saute until tender but not browned!. Add tarragon, stir until it is softened!.
Pour mixture into a bowl of food processor!. Add remaining ingredients!. Process until mixture is smooth!. Add cheese if you prefer a more spreadable consistency!. Spoon into a serving bowl!. Top with garnish of your choice!.
People who do not like ordinary pate seem to love this one!. Vary the herbs and substitute the vegetables as you wish!. Serve with water crackers, thick slices of crusty French bread, thin slices of whole wheat bread, or unsalted whole wheat crackers!. May be frozen!.

2!.Bacon and Cheese Eggs with Mayonnaise

6 hard cooked eggs, peeled
3 tbsp mayonnaise
2 slices crisp bacon
2 tsp vinegar
1/4 cup grated cheddar
1/8 tsp salt

Using a knife cut the outside of the egg white just as far as the yolk, carefully remove the egg white leaving the yolks intact!.
Mash egg yolks and stir with mayonnaise, bacon, vinegar, cheese, and salt!.
Fill egg white halves!. Top with crumbled bacon!.

3!.Caviar Pie

12 eggs hard-boiled
Mayonnaise
Salt and freshly ground pepper
2 bunches scallion chopped
8 ounces cream cheese softened
16 ounces sour cream
2 large jars black caviar
1 large jar red caviar

Grease a 10" spring-form pan with a little mayonaise!.
Mash eggs, mayonaise (just enough to hold eggs together), salt, and pepper together!. Spread into bottom of pan!.
Spread scallions on top of egg salad!.
Mix cream cheese and sour cream until smooth!. Spread over scallions!.
Recipe can be prepared up to this point the day before (recommended)!. Place the spring-form on a paper towel on a plate (the sour cream tends to separate)!.
Spread the caviar into an aesthetic design use wax paper for masking and toothpicks to move caviar!. Serve with plain crackers

4!.Cheese Puffs

8 ea slices white bread
2 cup milk
8 oz old English cheese slices
1/2 tsp pepper
3/4 tsp dry mustard
1/4 cup butter, melted
1 tsp salt
3 ea eggs

May be prepared the day before!. At least 4 hours before cooking, trim crusts and cut bread into 1" squares!. Cut cheese into bite size pieces!. In large greased casserole, alternate layers of bread and cheese!. Pour melted butter over top!.
Beat eggs well, stir in salt, pepper, mustard and milk!. Combine thoroughly!. Pour over casserole!. Cover and refrigerate!. One hour before serving, bake at 350 degrees, 30 minutes covered, then 30 minutes uncovered until top is golden and puffy!.

5!.Fried Cheese Balls - serves 15 small balls

1 cup grated mild cheese
2 tsp flour
1/4 tsp salt
1/8 tsp cayenne pepper
2 egg whites, stiffly beaten
3/4 cup fine cracker crumbs
1/2 vegetable oil

Combine the cheese, flour, salt, and cayenne pepper!. Using your hands, gently stir in the egg whites!. Pat the mixture into small balls and roll them in cracker crumbs until thoroughly coated!.
Heat the oil in a skillet, when it is hot, put the balls in the pan without crowding them!. Cook over medium-high heat, turning so all sides become golden brown!. Drain on paper towels!.
