What kind of dish can I make with summer sausage?!
I have a roll and I wanted to make more than meat and cheese and cracker snack!. Its terrible in ramen noodles!.Www@FoodAQ@Com

You're limited with summer sausage since it's already cooked!. However, you could make a good tomato sauce, dice up the sausage and simmer together for about 30-45 minutes, though this would decrease the flavor of the sausage itself!. Summer sausage is meant to be eaten as is, not as part of a recipe!.Www@FoodAQ@Com
Like keilbasa or other sausages, it makes a good addition to things like potatoes, tomatoes, peppers and onions - things that go well with the smoky sausage flavorings!. Hope you get a chance to try this recipe out! :)
Sausage Stew
2 slices bacon, chopped (or 1 tablespoon bacon grease)
1 large onion, diced
1 red bell pepper, diced
1 teaspoon dried marjoram (or thyme or sage)
1 teaspoon caraway seed
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes
2 teaspoons kosher salt
1/2 teaspoon black pepper
1 bay leaf
15 ounces canned diced tomatoes
2 cups hot water
8 ounces summer sausage, skin removed, diced small
2 medium potatoes, skins on, diced
1 pound zucchini, diced
Sour cream
In a Dutch oven, start bacon on medium high!.
Add onions and peppers as prepped, then spices; cook til onions begin to brown!.
Stir in tomatoes and water, bring to a boil!.
Add summer sausage and potatoes, return to a boil!.
Reduce heat to maintain a slow simmer, cover and cook for 10-15 minutes!.
Add zucchini and cook until tender, about 10 minutes or longer if you like!.
Remove bay leaf!.
Serve in bowls with dollops of sour cream on top and chunks of bread to dip!.Www@FoodAQ@Com

Slice up an onion and a green pepper!.
Chop a clove of garlic!.
Add a little olive oil in the pan that you cooked the sausage in and then sautee the vegetables in the pan for about 10 minutes!.
Season w/ salt and pepper!.

Summer Sausage Surprise- (I'm not sure, since I didn't really check, if this Summer Sausage was already cooked or needed to be cooked, so if the recipe doesn't help, I'm sorry)!. =)

* 3 pounds of Markey Day Summer sausage!.
* 1 6-8 ounce jar of Dijon mustard!.
* 1 12 ounce jar of apricot preserves!.
Directions:
1!. Cut the bottom of the Summer sausage off lengthwise to make it flat on one side!. This will prevent it from rolling around!.
2!. Criss cross the top of the Summer sausage by making cuts with a sharp knife, one-third to one-half through sausage!.
3!. Place on foil lined baking sheet!. Bake at 350 degrees for 20 to 25 minutes (until hot all the way through)!.
4!. Mix mustard and apricot preserves together in a small bowl!. (You may want to add more or less preserves to taste!.)
5!. Spread mixture over top of Summer sausage to cover and return to oven!. Bake approximately 20 more minutes or until top is crusty!.
6!. Place on serving platter!. Slice thin and serve with mini party rye bread slices!. You may wish to serve any leftover sauce, heated, for dipping!.Www@FoodAQ@Com

summer sausage doesn't go well with much, it is a snacky thing!.
It probably wouldn't be bad with mashed potatoes!. Something you could do to make it mesh a little better with a hot dish is briefly sear your sausage slices on both sides and serve it hot with the hot potatoes!. But summer sausage is traditionally a cold snack!. cheers!Www@FoodAQ@Com
