A great recipe with beans?!


Question: A great recipe with beans!?
I am very anemic so I was told to eat a lot of beans, especially lentils!. I tried white lentils in rice and I really did not like it!. Do you know any good low cal recipies with a lot of beans that I could cook with a microwave or wok!?Www@FoodAQ@Com

*Con Queso Bean Dip (Microwave)

1 (15 1/2 ounce) can light kidney beans, drained and rinsed (can use low-sodium)
3/4 cup salsa (mild or medium)
1 teaspoon chili powder
1 teaspoon cumin
salt, to taste (optional)
1 cup shredded cheddar cheese (can use lows-fat)
1/2 cup sour cream (can use fat-free)
2 tablespoons chives or green onion

1!.In a 1-qt!. microwave-safe casserole,, mash the beans with a fork!.
2!.Stir in the salsa, chili powder, cumin, and salt, if desired!. Stir to mix well!. Stir in the cheese!.
3!.Cover with the casserole lid, and microwave on high power for 3 to 4 minutes until heated through!. Remove from the microwave!. Stir to mix in the melted cheese!. Spread the sour cream on top!. Sprinkle with the chives!.
4!.Serve warm with tortilla chips (can use fat-free chips)!. Cover and refrigerate leftovers, which will keep 4 to 5 days!.

*CHILI REFRIED BEAN WRAP

18-20 Favorite Tortilla Chips
1 10" Soft Flour Tortilla, or 2 two 6" Flour (or Corn) Soft Tortillas
? cup canned Fat-free Refried Beans
2 Tbsp!. Grated Low-fat Monterey Jack Cheese
1 Tbsp!. Favorite Salsa
Optional Toppers: Sour Cream or Yogurt; Chopped Tomatoes; Chopped Lettuce; Black Olive Slices; Jalapeno Slices; Avocado Slices; Chopped Cilantro; Thinly-sliced Green Onions!.

Place beans on a section of a large microwave-proof plate, then mix salsa into beans!. Cover and microwave on HIGH for 1 minute!. Stir beans to equalize heat; spread evenly over half the plate and sprinkle with grated cheese!.
Place tortilla chips on remaining portion of plate, cover and continue to cook for 30-60 seconds, or until heated through!. Dip warmed chips into bean and cheese mixture, then spoon on optional toppers of choice!.

*Lemony Garlic Beans (Microwave)

500 g fresh bean (recipe calls for green but butter beans are fine too)
1 cup chicken stock
30 g butter
1 onion, finely chopped
1 garlic clove, crushed
1 tablespoon plain flour
1 tablespoon lemon juice

1!.String & cut beans into 2!.5cm lengths!. Place into a shallow dish with stock, cover & cook on high for 8 minutes or until beans are tender; drain & reserve stock!.
2!.Place butter, onion & garlic in a separet dish, cook on high for 4 mins or until onion is tender!.
3!.Stir in flour, then lemon juice and reserved stock, cook on high for 3 mins or until mixture boils & thickens, stirring once!.
4!.Combine beans with hot sauce, reheating for approx 2 mins if necessary!.

*Calico Beans (microwave)

8 slices bacon
1 (1 lb!.) can green beans, drained
1 (1 lb!. 15 oz!.) can pork & beans, drained
3/4 c!. dark brown sugar
1/2 tsp!. dry mustard
1 c!. chopped onion
1 (1 lb!.) can lima beans, drained
1 (1 lb!.) can kidney beans, drained
1/2 c!. vinegar
1/2 tsp!. garlic salt
1/8 tsp!. pepper

Cook bacon in microwave oven until crisp; drain, reserving drippings!. Crumble bacon!. Saute onion in bacon fat for 3 minutes!. Stir once!. Combine all ingredients mixing lightly!. Turn into 3 quart casserole and bake 20 minutes!. Stir and turn dish twice during cooking time!. Makes 16 servings!. #NOTE: Divide mixture between 1 1/2 quart casserole and freeze one for later use!. Cooking time for 1 1/2 quart casserole will be 13 to 15 minutes!.

*Vegetarian Lentil Burger
These make great do-ahead meals, and you can store shaped, ready-to-cook patties in the refrigerator for a week's worth of work lunches!. I use black lentils in this recipe, some of the other types of lentils are too mushy when cooked - so I'd stick with the black lentils!. Feel free to spice up the batter by experimenting with your favorite seasonings!.

3 cups cooked black lentils
4 large eggs
1/2 teaspoon fine-grain sea salt
1 onion, finely chopped
1 cup toasted fine (whole-grain) bread crumbs
1 tablespoon extra-virgin olive oil (or clarified butter)

Combine the lentils, eggs, and salt in a food processor!. Puree until the mixture is the consistency of a runny yet textured hummus - it's o!.k!. if many of the lentils remain whole!. Pour into a mixing bowl and stir in the onion!. Add the breadcrumbs, stir, and let sit for a couple of minutes so the crumbs can absorb some of the moisture!. At this point, you should have a very moist mixture that you can easily form into twelve 1 1/2-inch-thick patties!. I err on the moist side here, because it makes for a nicely textured burger!. You can always add more bread crumbs a bit at a time to firm up the dough if need be!. Conversely, a bit of water or more egg can be used to moisten the batter!.
Heat the oil in a heavy skillet over medium low, add 4 patties, cover, and cook for 7 to 10 minutes, until the bottoms begin to brown!. Turn up the heat if there is no browning after 10 minutes!. Flip the patties and cook the second side for 7 minutes, or until golden!. Remove from the skillet and cool on a wire rack while you cook the remaining patties!. Carefully cut each patty in half, insert your favorite fillings, and enjoy immediately!.

Take a can of Canellini beans (washed and drained) and put them in a pot with a can of chicken broth and heat!. In a separate pot cook a small type of macaroni!. When this is done, drain the macaroni and mix it with the heated chicken broth and beans!. Season to taste and add grated cheese!. Mangia!Www@FoodAQ@Com

well my mom makes a recipe with hamburg and beans!.!.!. i think its so good!!!

COOK some hamburg (however much you will eat!.!.!.) over the stove top!.!.!.then put 1/2 the amount of the hamburg you used!.!.!.put in that much beans!.!.!.and mix on LOW heat for about 5 mins mix every 2 mins!.!.!.and you can eat it plain or add some taco seasoning and then eat it with a tacoWww@FoodAQ@Com

i don't like hardening affect of beans in the microwave!.!.they seem as though they have a tough shell from the microwave!.

i put a little water in a pan and add olive oil and tomato paste and bring that to a boil than add the drained beans and put the heat to med!. high!.!.!.and let them cook for at least an hourWww@FoodAQ@Com

Open bag of beans!.

Wash a couple of times!.!.!.!.!.check & make sure no rocks!.!.!.!.dirt!.!.!.!.!.can find some occassionally

Put in large soup/stock pan!.

Add 2 ham hocks (NOT the smoked ones)!.!.!.!.!.OR a large ham bone!.!.!.!.or neck bones!.!.!.!.for seasoning!.

Cover with water!.

Cook over high heat!.!.!.!.reduce medium heat!.!.!.!.cook until beans are tender!.!.!.!.!.adding water as needed!.!.!.!.!.to desired soupy-ness you like!.!.!.!.!.!.!.3-4 hours!.!.!.!.!.!.stirring often to keep from sticking to pot!.

Salt & pepper to taste!.

Remove bones!.!.!.!.any fat from ham hocks!.

Serve with cornbread!.!.!.!.chopped onions!.!.!.!.banana peppers!.!.sliced tomatoes!.!.!.(crispy fried potatoes!.!.!.optional) & slaw!.Www@FoodAQ@Com
