Your grandmother got it best because they kept it simple!. A serious hot skillet with only salt and pepper with the fish cooked really fast with lots of oil!. Brown one side (the flesh side) and as it does don't move it!. Then sear the skin side a bit!. Pull it off and tent it with some foil and let it sit for a minute!.Www@FoodAQ@Com

Health issues aside, there's nothing better than fresh trout pan fried in butter!. Spread it open slightly and cook the inside then do one side then the other!. Get the skin and tail nice and crispy- delicious! I hope I catch some this year!Www@FoodAQ@Com
THEY TASTE SO MUCH BETTER JUST FRESH FROM THE LAKE TOO!. ON A CAMPFIRE WITH A CAST IRON SKILLET AND SOME SHORTENING, I WOULD SALT N PEPPER THE FISH AND DREDGE IT IN FLOUR AND FRY BOTH SIDES TIL CRISPY!. AND YA KNOW!.!.!.!.!.!.!.THE TAIL IS THE BEST PART!!!Www@FoodAQ@Com
