I have been to Greece and studied the cuisine extensively!. There is nothing simple about Greek cooking!. So here is what I suggest based upon many rustic neighborhood restaurant meals enjoyed there:
Greek Salad
Cucumber, peeled and coarsely sliced
Roma tomatoes, sliced coarsely
Spanish onions, coarsely sliced
Black Greek olives (they are similar to kalamata olives--tart, wrinkled---only bigger)
Feta Cheese, coarsely crumbled or sliced into chunks
Lemon juice freshly squeezed over all
Good Greek olive oil, drizzled over all
I don't know how many people you need to serve, but this is refreshing, simple, you should serve it at room temperature, and is delicious!. Plus, it has feta cheese, greek olives, and Greek olive oil, all staples in the Greek diet!.

Baklava: (dessert)
INGREDIENTS
1 (16 ounce) package phyllo dough
1 pound chopped nuts
1 cup butter
1 teaspoon ground cinnamon
1 cup water
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup honey
DIRECTIONS
Preheat oven to 350 degrees F(175 degrees C)!. Butter the bottoms and sides of a 9x13 inch pan!.
Chop nuts and toss with cinnamon!. Set aside!. Unroll phyllo dough!. Cut whole stack in half to fit pan!. Cover phyllo with a dampened cloth to keep from drying out as you work!. Place two sheets of dough in pan, butter thoroughly!. Repeat until you have 8 sheets layered!. Sprinkle 2 - 3 tablespoons of nut mixture on top!. Top with two sheets of dough, butter, nuts, layering as you go!. The top layer should be about 6 - 8 sheets deep!.
Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan!. You may cut into 4 long rows the make diagonal cuts!. Bake for about 50 minutes until baklava is golden and crisp!.
Make sauce while baklava is baking!. Boil sugar and water until sugar is melted!. Add vanilla and honey!. Simmer for about 20 minutes!.
Remove baklava from oven and immediately spoon sauce over it!. Let cool!. Serve in cupcake papers!. This freezes well!. Leave it uncovered as it gets soggy if it is wrapped up!.

Soulvlaki: tender pork skewers
INGREDIENTS
1 lemon, juiced
1/4 cup olive oil
1/4 cup soy sauce
1 teaspoon dried oregano
3 cloves garlic, crushed
4 pounds pork tenderloin, cut into 1 inch cubes
2 medium yellow onions, cut into 1 inch pieces
2 green bell peppers, cut into 1 inch pieces

DIRECTIONS
In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat!. Cover, and refrigerate for 2 to 3 hours!.
Preheat grill for medium-high heat!. Thread pork, peppers, and onions onto skewers!.
Lightly oil grate!. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking!.

Hummus Dip: serve with pita chips
INGREDIENTS
2 cups canned garbanzo beans, drained
1/3 cup tahini
1/4 cup lemon juice
1 teaspoon salt
2 cloves garlic, halved
1 tablespoon olive oil
1 pinch paprika
1 teaspoon minced fresh parsley
DIRECTIONS
Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor!. Blend until smooth!. Transfer mixture to a serving bowl!.
Drizzle olive oil over the garbanzo bean mixture!. Sprinkle with paprika and parsley!.
