Chicken Potato Casserole

1 lb!. cooked chicken, shredded
1 onion, chopped
1 can green beans, drained
1 can cream of mushroom or cream of chicken soup
8 oz!. cubed cheddar cheese
8 oz!. shredded cheddar cheese
4 cups prepared mashed potatoes

1!. Preheat oven to 350 degrees!.
2!. Place chicken in an even layer on the bottom of a 9” X 13” baking dish!.
3!. Top with a layer of onions and a layer of green beans so that chicken is no longer visible!.
4!. Pour soup over the layers and top with shredded cheese!.
5!. Stir together cubed cheese and mashed potatoes!.
6!. Spoon over the top of the casserole and spread to cover!.
7!. Bake for 30 to 40 minutes (until thoroughly heated)!.


Chicken Medley


2/3 cup butter
? small onion, chopped
3 celery stalks, chopped (optional)
? cup flour
2 cups milk
4 cups cooked chicken, diced
1 small can of mushrooms (optional)
1 small jar of pimentos (optional)
1 green pepper, chopped
1 can green peas or green beans, drained


1!. In a large skillet over medium heat, melt butter!.
2!. Add onions and celery; Slowly cook until soft; stirring often
3!. Mix flour into skillet and stir until onion and celery are coated!.
4!. Stir in milk and allow the mixture to thicken!.
5!. Mix in chicken, mushrooms, pimentos, bell pepper and peas!.
6!. Stir and cook until thick; thin with milk if desired
7!. Serve over rice, noodles, biscuits or bread!.


Chicken Pasta Skillet

1 pound boneless, skinless chicken, cut into small piece
1 medium green pepper, sliced!.
1 small onion, chopped
1? cups water
2 cups Rotini pasta, uncooked
1 jar (26 oz!.) spaghetti sauce
1 cup mozzarella cheese

1!. Spray large skillet with cooking spray

2!. Add chicken and cook over medium heat for about 5 minutes or until evenly browned!.

3!. Add green peppers and onions, and continue to cook until tender, stirring occasionally!.

4!. Add water and bring to boil!.

5!. Reduce heat and stir in pasta while making sure it is covered with water!.

6!. Cover and simmer until pasta is done!.

7!. Stir in sauce and sprinkle with cheese!.

8!. Cover and reduce heat to low!.

9!. Continue to cook for 5 minutes or until cheese is melted!.

PORK CHOPS AND RICE BAKE

4 pork chops
2 Tbsp!. olive oil
1 can whole kernel corn, drained
1 cup rice, uncooked
2 cups boiling water
1 envelope dry onion soup
1 small can mushrooms, drained (optional)
Cooking spray



1!. Preheat oven to 350 degrees F!. and lightly coat a 9 X 13 inch baking pan with cooking spray!.
2!. Heat oil in a large skillet and brown pork chops!.
3!. Meanwhile, combine corn, mushrooms, rice along with boiling water in baking pan!.
4!. Reserve 1 teaspoon of dry onion soup before stirring the rest into the rice mixture!.
5!. Place browned pork chops on top of all in baking pan and sprinkle them with reserved dry onion soup!.
6!. Cover baking pan with aluminum foil and bake for 40 to 50 minutes or until water is absorbed!.
7!. Remove from oven and let stand, covered, for 10 minutes before serving!.

Makes 4 servings


* Any vegetable, such as green peas, carrots, lima beans, green beans, etc!. can be added to or substituted for corn, if desired!.Www@FoodAQ@Com

I saw this recipe on the biggest loser and I think its easy and yummy and you can change it to what you got on hand!.!.

Ingredients!.!.!.
Boneless, skinless chicken (cubed)
Summer squash and/or spinach
Mushrooms
Green Peppers
Onions
Spagetti Sauce

Add a small amount of olive or canola oil to pan and fry up chicken till cooked through, then remove from pan, add a little more oil and cook veggies for about 10 minutes (I just cook it till I like them), then add chicken back to pan and pour spagetti sauce over chicken and serve!. Yum!

If you dont have those veggies you can exchange them for ones you do have!

also what helps me is keeping healthier stuff stocked up, like veggies/fruits (if getting canned make sure no added salt or sugar), lots of chicken, if you like mayo try mayo with canola oil, I think it taste ok (way better then light mayo), 2% cheeses, light sour cream, milk and butter for cooking, etc!.

Heres a yummy mashed potatoe recipe that doesnt even need a gravy!.!.!.!. (its a weight watchers recipe)

4-5 Red potatoes, mostly peeled, cut into good-sized chunks (example full sized potato cut into 4ths)
4-6 Garlic Cloves, peeled
2/3 C Fat Free Sour Cream
4 Tbsp Light Butter

In large pan add potatoes & garlic cloves add enough water to cover!. Boil for about 10 minutes over med-high heat!. Drain water from pan!. Add sour cream (about 2/3 cup or so) and 4 tbsp of butter and mash well!. Add salt and pepper!. Serve!.

Another thing I try to do is take normal recipes and just make them healthy, trim fat from meat, add a salad to dinner, etc!.!.!.Www@FoodAQ@Com

Steak & Vegetable Casserole!.
2 - 3 lb!. round steak, cut into serving pieces
2 tbsp!. salad oil
2 lg!. onions, sliced
2 c!. each sliced carrots and sliced fresh mushrooms
1 med!. size green pepper, sliced
1/2 lb!. fresh green beans, cut into pieces
3 tomatoes, sliced
1/2 c!. uncooked regular rice
2 tsp!. salt
1 1/2 tsp!. sweet basil
Oregano
1/4 tsp!. freshly ground black pepper
1 c!. shredded cheddar cheese
Brown the meat in the oil in a large frying pan!. Arrange 1/3 of the sliced vegetables in a 4 quart casserole!. Place 1/2 of the meat pieces over these vegetables and sprinkle with 1/3 of the rice and seasonings!. Add another 1/3 of the sliced vegetables, the remaining meat, 1/3 of the seasonings and all the remaining rice!. Top with remaining sliced vegetables and seasonings!. Cover and bake at 350 degrees for 1 1/2 hours or until meat is tender!. Remove cover, sprinkle with cheese and return to oven to melt!.Www@FoodAQ@Com
