See if this will help give you a hint or two!. I'm thinking you need to take the skin off!. Or maybe your oven needs to be adjust, it might be cooking too hot!.

Try this recipe
BAKED STUFFED CHICKEN LEGS

1/2 lb!. mushrooms, coarsely chopped
1 sm!. onion, coarsely chopped
1/2 green pepper, coarsely chopped
1 c!. plus 1 tbsp!. butter
1/2 tsp!. Worcestershire sauce
Pinch of salt
Pinch of pepper
Pinch of sage
2 c!. cooked wild rice
6 chicken legs with thighs attached
Juice of 1 lime
1 tbsp!. paprika

Saute mushrooms, onion and green pepper in 1 tablespoonful butter until tender!. Add Worcestershire sauce and seasonings!. Stir in rice!. Stuff chicken legs tightly between meat and skin with rice mixture!. Arrange in shallow baking pan!. Combine remaining melted butter with lime juice and paprika; brush chicken with mixture!. Bake at 350 degrees for 1 hour or until golden brown, basting frequently!. Yields 6 servings!.Www@FoodAQ@Com

My oven also has a "pre-heat" setting which is a lot hotter than just "bake"!. Be sure you are on bake!. My favorite chicken recipe starts out with a piece of aluminum foil loosely covering the chicken for the first 45 minutes at 425 degrees, then take off the foil and 15 minutes at 450 degrees!. Have the rack in the middle of the oven!. (Chicken with skin on, shaken in flour and melted butter brushed on top!.)Www@FoodAQ@Com

When you put them in the baking dish (I always use a 13x9 glass cake pan), put water in the bottom on the dish -- not much, but a quarter inch or so!. also, if the top of the chicken is burning, cover them with foil!. Vent the foil once you've put it over the pan!. About 10 minutes or so before you want to serve it, take the foil off so that the chicken can get a little brown, though!.Www@FoodAQ@Com

Maybe you need to put a cheap oven thermometer in there to see if your temperature is off!. If the only thing burning is your chicken, lower the rack maybe, and cook your chicken at 325 instead!.Www@FoodAQ@Com

If the chicken itself is burning, your oven temperature is WAY off!. get your oven looked at!.

If it's just the pan juices burning, pour some water in the pan, or chicken broth if you plan to use the drippings!.Www@FoodAQ@Com

Make sure your oven is set to bake!.!.!.not broil!.!.!.If it set to bake then your oven is getting much hotter than it should!.At 350 your chicken should bake for 1 hour with out the chance of burning!.Www@FoodAQ@Com
