It depends what occasion you are cooking for!. You could try making an easy and cheap Indian!.
Ingredients:
1 Chicken breast
1 Onion
1 and a half teaspoon of curry powder (or preferably a mix of ground cumin and ground coriander)
Wine (a cheap half bottle of wine should do or if you are entertaining guests, buy a full bottle and serve the rest)
Green pepper (optional)
Dice the chicken!. Add the curry powder to the diced chicken and some wine!. Let this mixture marinate for at least 30 minutes!.
Chop the onion into 6 big chunks!.
Do the same with the pepper!.
In a wok or frying pan, fry the chicken!.
When cooked add the onion and pepper and add any remaining sauce from the marinade!. Cook for a couple of minutes (the onion and pepper should still be firm) and serve with rice!.Www@FoodAQ@Com

Baked Chicken and Rice
Put 1 1/2 cups of dry brown or wild rice in a cake-pan size (approx 13 by 9 inch) baking dish, add a can of cream of chicken or cream of mushroom soup, and a can of milk and (optional, but let's get a little extravagent!) a four ounce can of sliced mushrooms with the liquid, and 4 ounces of water, and stir it all together!.
Then take a few frozen chicken breasts, legs, and/or thighs and lay them on top!. Dust them with paprika or poultry seasonings if you want!. Put this in the oven on 350 degrees for an hour!. Don't turn it or stir it, just let it bake!.
The rice will cook while it bakes and the sauces will bubble!. Stick a fork in the thickest parts of the chicken pieces, clear juices and tenderness means it's done!. Carry the pan to the table, and serve!. Way easy and way good!
Jello Poke-Salad Cake
Mix up a cake mix and bake it too while you're baking the chicken-a plain white or yellow one is good; take the cake out after it bakes, cool ten minutes, and then poke holes all over with the handle of your wooden spoon!. Let it cool, then mix any flavor jello you want and let the jello chill about half an hour!. pour the jello over the cake dribbling down into each poked hole and the rest over the top, chill the cake, then top with whipped (cool whip type) topping!. It's a nice light summer treat!. (I use pineapple jello and pineapple tidbits with a white cake; you can mix and match flavors all you want)Www@FoodAQ@Com

Chicken curry stir fry - cheap, quick, easy & healthy! Use a bought cooked bbq chicken - sometimes they are very cheap towards the end of the day so you could pick one up on the way home from work!.
Add garlic (fresh or from a jar) to a little oil in a heated wok or large fry pan, also maybe add some tandoori paste or other curry paste for flavour, cook couple of mins, then add some vegies & some liquid!. Use any vegies you like, eg!. snow peas, beans, brocolli, cauliflower, bok choy, chopped up to roughly equal size!. For the liquid, stock is good, but even a bit of water will do (maybe half a cup, depending on how big the meal is)!. Lid on while it cooks for 3 - 5 mins, then add the chopped up barbequed chicken (with the skin, bones & stuffing removed)!. Won't take long for the chicken to heat up & absorb yum flavours!. Can have it on it's own or on top of some rice!. Just a note regarding the curry paste - I'm not much of a spicy food eater, so I only use about a teaspoon for a meal for the flavour but if you enjoy eye-wateringly hot food, use as much as you like - Enjoy!Www@FoodAQ@Com
