I want to make oven-baked corn dogs...?!
i found a recipe that seems easy enough but my grocery store apparently does not carry jiffy mix or any other form of corn muffin mix!. what can i use instead!? i do have flour and cornmeal!.

and do you think it would be possible to double the batter recipe and then use the rest to make corn muffins!?
does anyone have an easy oven baked corn dog recipe that does not use buttermilk or corn muffin mix!?
thanks!.Www@FoodAQ@Com

Answers:
This recipe doesn't use cornmeal, so I don't think it's technically a "corn" dog, but give it a try!. :)

just mix equal parts cornmeal, and flour (self-rising)
add egg and milk until you get correct consistancy add a pinch of salt and a pinch of sugar (if you want sweetness)
batter should be thick
Yes, you can use the batter left over for muffinsWww@FoodAQ@Com

I think it would be easier to pour your corn bread mix into an 8x8 pan and put the wieners side by each in the batter!. Bake as usual!.Www@FoodAQ@Com
1 1/2 cups all-purpose flour (spooned and leveled), plus more for dusting sausages
2/3 cup yellow cornmeal
2 teaspoons baking powder
2 teaspoons sugar
salt and pepper
2/3 cup milk
2 large eggs, lightly beaten
2 teaspoons vegetable oil
4 precooked smoked sausages (13 ounces total)
Directions
Preheat oven to 375 degrees!. Line a baking sheet with parchment paper; set aside!. In a medium bowl, whisk together flour, cornmeal, baking powder, sugar, 1/2 teaspoon salt, and 1/4 teaspoon pepper!. Make a well in center; add milk, eggs, and oil!. Mix just until combined!.
Insert an ice-pop stick into one end of each sausage, leaving a 1 1/2-inch handle!. Dust with flour; tap off excess!. Using handle, rotate each sausage over bowl as you spoon batter to coat evenly!. Place on sheet; bake 5 minutes!. Remove from oven!. Using a spatula, reapply batter that has slipped onto sheet!. Return to oven; bake until golden, 20 minutes!.
I'm sure you could substitute hot dogs instead of sausage, also Jiffy Corn Muffin Mix is really sweet - you can use white corn meal instead of yellow -Www@FoodAQ@Com
