Buttercream icing with lemon flavor?!
I've had this icing many times (mostly at baby or wedding showers) and its delicious! However, when I attempted to make my own, it tasted like a stick of butter!. Any good recipies for buttercream icing with a hint of lemon flavor!?!?Www@FoodAQ@Com

LEMON BUTTERCREAM FROSTING
1/2 c!. of butter, room temperature
1 tsp!. grated lemon rind
1 tsp!. vanilla extract
Pinch of salt
3 1/2 c!. confectioners' sugar
1/4 c!. milk
1 tbsp!. fresh lemon juice
In a mixer bowl, cream the butter, lemon rind, vanilla and salt until light and about 2 minutes!. Add confectioners' sugar alternately with milk until the mixture is creamy and smooth, beating well after each addition!. Beat in the lemon juice!.
Try this recipe!. It is similar to the one I used to make orange buttercream frosting and I thought it came out great!. Since you want a lighter lemon flavor then you might want to scale back on the lemon ingredients!. The orange buttercream had a definite orange flavor!.Www@FoodAQ@Com

Make your basic butter cream frosting!. Rather than add vanilla extract use lemon extract!. You will also need the zest of at least one lemon!. The zest is where almost all of you flavor is going to come from!. If you add a lot of lemon juice you will have a runnier frosting and you will end up adding more sugar and that will dilute your flavor!.

4 ounces of liquid!. (lemon juice in your case) or milk, cream
pinch of salt
Flavor to taste- Use you lemon extract!.
