julliene is a strip cut into 1/8"x1/8"x2!.5"!. Simply peel your carrot and cut the small end off and the large end off, with straight angles!. Next, cut the carrot into as many 2!.5" sections as possible (probably 2-3)!. Then stand the pieces upright and cut them into near perfect rectangular prisims!. Lay them on their sides and slice 1/8" "sheets" of carrot!. Slice your sheets into strips that are as close to 1/8" x 1/8" x 2!.5" as possible!. If you slice the strips into perfect little cubes they will be "brunoise" cuts!.Www@FoodAQ@Com

Carefully cut a slice lengthwise off the carrot, to give it a stable surface!. Now lay carrot on this flat edge!.

Vertically cut carrot into slices!. You need a really sharp knife; let it do the work for you!.

Then stack up those slices and cut again to make matchsticks!. You can also cut the first little sliver into matchsticks as well!.Www@FoodAQ@Com

use a grater!. Its made of metal with holes all over the face of it!. Hold the carrot at an angle and as you rub up and down the face of it, it shreds the carrots juliene style!. Some graters are four sided with different size holes on each side for different results!. fine, (for cole slaw) sliced (for soups), juliene,(for salads)Www@FoodAQ@Com

Cut the ends off!. Cut in half!. cut in half again!. and depending on how thin you want them you may want to slice that through the middle to make small, thin square pieces!. Now make thin strips of them!. I wish I could do diagrams on here hahahWww@FoodAQ@Com
