Fairy cakes

For the sponge
4 free-range eggs
225g/8oz sugar
225g/8oz self-raising flour
225g/8oz butter, melted
For the icing
170g/6oz icing sugar
110g/4oz butter
55g/2oz cocoa powder, sifted
To decorate
white chocolate buttons
milk chocolate buttons

Method
1!. Preheat the oven to 180C/350F/Gas 4 and prepare two 12-hole tartlet tins with fairy cake cases!.
2!. Whisk together the eggs and sugar until light and fluffy!.
3!. Gradually add the flour and the butter, folding the mixture together gently!.
4!. Pour the mixture carefully into the fairy cake cases!.
5!. Bake the cakes for 10-15 minutes, until golden on top and a skewer carefully inserted into one of the cakes comes out clean!. Allow to cool for ten minutes on a wire rack before removing from the tin!.
6!. To make the icing, whip together the icing sugar, butter and cocoa powder!.
7!. Once the cakes are cool, ice them liberally!.

Ingredients
100g (4 oz) Self Raising Flour
100g (4 oz) Soft Margarine
100g (4 oz) Caster Sugar
2 Eggs
1 Cup of icing sugar

Method
(1) Place all the ingredients in a large bowl and beat with a wooden spoon for about 2-3 minutes until well mixed!. Kids love this bit, but be prepared for a messy table!.

(2) Put the bun cases on a baking tray and spoon a tablespoon of the mixture into each of the cases!.

(3) Bake for about 15-20 minutes at 180°C, 350°F or Gas Mark 4!.

(4) When the cakes are cool, mix some icing sugar with a little water to make a thick paste!.

(5) Decorate he cakes with the icing and place Jellytots, Smarties or anything you fancy on the top!. This is were the creativity comes in for children to learn!.Www@FoodAQ@Com

110g (4oz) Self Raising Flour

50g (2oz) Currants or Sultanas
2 Eggs, lightly beaten

Pre-heat oven to 190°C; 375°F: Gas 5!.
Cream the butter and sugar until soft and light!.
Add eggs a little at a time!.
Sift the flour and gently fold into the mixture!.
Fold in the currants or sultanas!.
Place 18 paper baking cases into bun trays!.
Spoon in the mixture, filling about two-thirds of the cases!.
Bake for 20-25 minutes, or until well risen and golden brown!.
Place on a wire rack to cool!.

Ingredients
1/2 cup unsalted butter, softened
7 tablespoons sugar
2 large egg
3/4 cup self-rising cake flour
1/2 teaspoon vanilla extract
2-3 tablespoons milk
Directions
1Preheat oven to 400 degrees F!.
2Line a 12 cup muffin tin with baking cups!.
3Put all the ingredients except for the milk into a food processor and blend until smooth!. Pulse while adding the milk down the funnel to make for a soft consistency!.
4It doesn't seem like enough, but you can get enough into each baking cup, just scrape it all out and try to fill each one equally!.
5Bake for 15-20 minutes or until they are golden on top!.
6Cool on a wire rack, but remove from the tin as soon as possible!.
7Before you decorate, slice off any mounded tops so you have a flat surface to decorate!. Icing: Mix the sugar, egg white and lemon juice in a small bowl until smooth and creamy, it should have the consistency of heavy cream I always break the batch into smaller batches so I can have different colors When my girlfriend made these for my shower, she frosted them with a bright pink icing, sprinkled them with iridescent edible glitter and topped it with an edible (gum paste) rosebudWww@FoodAQ@Com

4 egg yolks
4 tbsp!. milk
1/2 c!. flour
2 tbsp!. flour with 1 tsp!. baking powder
Pinch of salt
1 tsp!. vanilla
4 egg whites
1 c!. sugar
1 tsp!. vanilla
Chopped nuts
Whipped cream

Mix butter, 1/2 cup sugar, egg yolks, milk, flour, baking powder, salt and 1 tsp!. vanilla!. Place cake batter evenly into 2 (10 inch) pans!.
Beat egg whites stiff, add 1 cup sugar and vanilla!. Spread mixture onto raw cake batter!. Sprinkle with chopped nuts!. Bake in very slow oven 300 degrees for 35 minutes or until done!. Serve with whipped creamWww@FoodAQ@Com

Yes, Fairy Cakes are simple and oh so sweet!. Just take a boxed cake mix, red velvet is best, and bake per directions in cupcake tins!. Once the cakes are done frost with blue icing and decorate with rainbow sprinkles!.Www@FoodAQ@Com
