Your best tried and true baked bean recipe?!
I'm looking for recipes that start with dry beans!. My grandfather made the best baked beans!. All I remember was he used bacon, mustard, and molasses in them!. Only recipes that you have made yourself, please!.Www@FoodAQ@Com

I swear this is the best baked bean recipe ever!. It comes from a restaurant in Boston and dates back to the Revolutionary War!.

1 2 1/2-quart bean pot or covered casserole
1 pound beans*
1/2 teaspoon baking soda
1/2 pound salt pork
1/2 medium onion -- peeled and uncut
4 tablespoons sugar
1/3 cup molasses
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon pepper
*Use California pea beans, York State beans or small white beans!.
Soak beans overnight!. In the morning, preheat oven to 325° F!. Place the
baking soda in a Dutch oven and fill half way with water!. Bring to a boil
and add the beans!. Boil for 10 minutes!. Drain beans in a colander and run
cold water through them!. Set aside!.
Dice the salt pork (available in the bacon section of the grocery store)
into 1-inch squares!. Put half of the salt pork on the bottom of the bean
pot, along with the onion!. Put beans in the pot!. Put the remaining salt
pork on top of the beans!.
Mix the sugar, molasses, mustard, salt and pepper with 3 cups of hot water
and pour over the beans!. Cover pot with lid and place the pot into the
preheated oven!. Bake for 6 hours!. Check pot periodically to check the
amount of liquid!. Add water to the beans slowly as needed to keep them
moist; do not flood them!. Remove the pot from the oven and serve!. Makes

1 cup chopped onion
1/4 pound salt pork, rinsed and cut into 1/2-inch cubes, or diced bacon
1 tablespoon Dijon mustard
1/2 teaspoon salt, or to taste
PREPARATION:
In Crockpot, combine all ingredients except salt!. Cover and cook on low 12 to 14 hours, stirring occasionally if possible!. Add salt to taste when beans are tender!.

You can start with a package of dried great northern beans, cooking them according to directions - though do NOT add any salt during the soak/cooking!. OR, as I do, start with a jar of the great northern beans in liquid!. Drain the liquid off of them (rinse to remove any excess salt)!.
Fry approx 1/2 pound of good quality smoked streaky bacon - cutting the strips into half - until they're half cooked; the meat will be cooked through, but it won't snap or break if you were to try and bend the strips!. Blot on paper toweling to remove excess fat!. Reserve four or five whole strips to the side and cut the rest of them into approx 1 inch pieces (half the length of your thumb)!.
All of what follows is strictly TO TASTE - if you think it needs more of something, add it!
Place the well drained beans into a mixing bowl!. To them add the cut bits of cooked bacon, 1/4 cup of ketchup, 1/4 cup dark brown sugar (mix 50/50 caster and dark muscavado sugar if you can find it), 1 small onion - very finely chopped, and approx!. 1/4 tsp of dry mustard powder!. I don't use regular mustard, the dry mustard will give it a small bit of heat to offset the sweetness of the sugar and ketchup!. Taste the liquid and decide if you feel it needs more of anything!. Be careful of the dry mustard, although you might not think it adds much, the power of it will come through moreso once the beans have baked, it will be the musky heat you feel at the back of the throat - think of chinese hot mustard!. (However, if you don't want to use dry mustard then go with approx 1/2 tsp of regular mustard in it's place!.)
Pour the mixture into a heat-proof casserole dish!. Top with the reserved strips of bacon!. Cover and seal with foil!. Bake in a preheated 375f (gas mark 5) oven for 20-25 minutes, remove the foil and bake a further 10-15 minutes until the beans are bubbly and nicely baked!. Check to make sure they don't over cook and become dried out!.

Cook a 1 pound package of great northern beans according to package directions!. Let them cool, drain!. Add 1/2 cup brown sugar, one medium diced onion, 1 tablespoon of yellow mustard, salt and black pepper to taste!. Mix together until sugar is dissolved and beans are coated well with mixture!. Chop up a package of bacon and sprinkle on top of beans!. Put in hot oven, about 325 and bake until heated through and juices and thickened!. YUMMY!Www@FoodAQ@Com
